Air Fryer "Sun-Dried" Tomatoes

Cook Time: 75 minutes

Ingredients:

  • 5 ounces red grape tomatoes, halved
  • teaspoon olive oil
  • Salt, to taste

Directions:

Step 1: Preheat your air fryer to 240F (115C).

Step 2: Place the halved tomatoes into a small mixing bowl. Add the olive oil and salt, then stir until the ingredients are evenly coated.

Step 3: Transfer the tomatoes to the air fryer basket, placing them skin-side down.

Step 4: Air fry the tomatoes at 240F for 45 minutes.

Step 5: After 45 minutes, use a spatula to gently smash the tomato halves, then air fry for an additional 30 minutes.

Step 6: Once done, transfer the roasted tomatoes to a plate lined with paper towels and let them rest for 1 hour to absorb excess moisture.

Step 7: Repeat the process with any remaining tomatoes, ensuring each batch is air fried to perfection.

This was a promising idea. However, the cookies got burnt within the first 45 minutes. I followed the instructions and baked them at 240 degrees in the air fryer, but when I checked on them halfway through to flip them, they had turned black. In order for this recipe to succeed, it would require a lower temperature, a shorter baking time, or perhaps both.

These tomatoes are delicious when roasted, with a chewy texture that I achieve by slicing them in half and cooking them for 8 hours at 125F in my air fryer.

Not all air fryers are the same! My microwave's air fryer function only goes down to 180 degrees, but I made delicious veggies by coating them in olive oil, garlic salt, onion powder, and Italian herbs. I adjusted the cooking time, squashed them, and cooked for an additional 15 minutes. They turned out much tastier than store-bought ones. Thanks for the idea!

Delicious, Fast, and Simple! I enhanced the flavors with garlic salt, garlic powder, onion powder, and rubbed sage. It turned out fantastic. The first time, I used vegetable oil as it was all I had, and now I'm trying olive oil for the same excellent results. Thank you for the recipe, Soup Loving Nicole!

Superior to store-bought. I recommend storing them in a glass jar with extra virgin olive oil.

Excellent recipe! I have an abundance of grape tomatoes in my garden. Remember to be gentle when mashing them down!
