Spicy Indian Green Beans, Gujarati Style Recipe

Ingredients (4 servings)

  • 1 pound fresh green beans, trimmed and cut into 1-inch pieces
  • cup vegetable oil
  • 4 cloves garlic, finely chopped
  • 1 tablespoon black mustard seed
  • 1 dried red chile pepper, crushed
  • 1 teaspoon salt
  • teaspoon white sugar
  • Ground black pepper to taste

Directions

Step 1: Bring a large pot of water to a boil. Once boiling, cook the green beans for 3 to 4 minutes. Afterward, remove the beans from the water.

Step 2: Drain the beans, rinse them under cold water, and drain again. Pat them dry with a paper towel to remove excess moisture.

Step 3: Heat vegetable oil in a large skillet over medium heat. Add the chopped garlic and mustard seeds, sauting until golden brown, which should take about 1 to 2 minutes.

Step 4: Stir in the crushed chile pepper, then add the cooked green beans, salt, and sugar. Continue cooking, stirring occasionally, until the beans are tender, about 8 minutes.

Step 5: Season with freshly ground black pepper to taste and serve hot.
