French Onion Soup

Ingredients
  • 1/4 cup unsalted butter
  • 6 large yellow onions, diced
  • 3 tablespoons dry sherry
  • 1 tablespoon sherry vinegar, or to taste
  • 4 cups chicken broth
  • 4 cups beef broth
  • 3 sprigs fresh thyme
  • Salt and ground black pepper, to taste
  • 6 slices French bread
  • 1/4 cup butter, melted
  • 1 cup shredded extra-sharp Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
Directions
  1. Step 1: Preheat the oven to 425F (220C).
  2. Step 2: In a large, oven-safe skillet, melt 1/4 cup butter over medium heat. Add the diced onions and stir to coat them in the butter.
  3. Step 3: Transfer the skillet to the preheated oven and roast the onions, stirring occasionally, until they are tender and browned, about 1 hour.
  4. Step 4: Once the onions are browned, remove the skillet from the oven and place it on the stovetop. Cook the onions over medium heat for an additional 5 minutes, allowing them to brown further and begin sticking to the bottom of the pan.
  5. Step 5: Pour the dry sherry and sherry vinegar into the pan, scraping up any browned bits from the bottom with a wooden spoon. Bring to a boil.
  6. Step 6: Transfer the caramelized onions to a large soup pot. Add the chicken broth, beef broth, and thyme sprigs. Bring the mixture to a boil, skimming off any foam or fat that rises to the surface.
  7. Step 7: Reduce the heat to low and let the soup simmer for about 1 hour. Season with salt and pepper to taste.
  8. Step 8: While the soup simmers, preheat the broiler and position the oven rack about 6 inches from the heat source.
  9. Step 9: Brush the slices of French bread generously with melted butter. Place the bread on a baking sheet and broil until golden and crispy, about 5 minutes.
  10. Step 10: Ladle the soup into oven-safe bowls. Top each bowl with a piece of toasted bread and sprinkle with 2 to 3 tablespoons of shredded Cheddar and Monterey Jack cheeses.
  11. Step 11: Place the bowls under the broiler and cook for 5-6 minutes, or until the cheese is melted, golden, and bubbly.
