Pineapple, Black Beans, and Couscous Recipe
Ingredients
- 1 (15 ounce) can pineapple chunks, drained (juice reserved)
- cup water
- 1 cup couscous
- 1 (15 ounce) can black beans, rinsed and drained
- cup warm water
- 2 tablespoons taco seasoning mix
Directions
Step 1: In a saucepan, combine the reserved pineapple juice and cup water. Place over medium-low heat and bring it to a boil. Once boiling, immediately remove from heat.
Step 2: Stir in the couscous until it is well combined with the liquid. Cover the saucepan and set it aside for about 5 minutes, or until the couscous absorbs the liquid and becomes tender. Fluff the couscous with a fork to separate the grains.
Step 3: While the couscous is resting, heat a skillet over medium heat. Add the drained pineapple chunks and black beans, stirring occasionally.
Step 4: In a small bowl, combine cup warm water with the taco seasoning mix. Stir until the seasoning is well dissolved, then pour it into the pineapple and black bean mixture in the skillet.
Step 5: Cook the mixture for 5 to 7 minutes, stirring occasionally, until it is heated through and well combined.
Step 6: Spoon the hot pineapple and black bean mixture over the fluffy couscous and serve immediately.
