Corn and Jalapenos Recipe

Sweet Corn with Jalapeo and Cilantro
This simple and flavorful dish is a perfect side to complement your meal. The combination of sweet corn, the kick of jalapeo, and fresh cilantro makes it a crowd-pleaser!
Ingredients
- 2 teaspoons olive oil
- 1 large jalapeo pepper, minced
- 2 tablespoons diced onion
- 1 cups frozen corn, thawed
- Salt and ground black pepper, to taste
- 1 tablespoon chopped fresh cilantro
Directions
- Heat olive oil in a medium-low heat pan.
- Add the minced jalapeo pepper and cook, stirring occasionally, until softened, about 5 minutes.
- Add the diced onion and cook for another 2 minutes, stirring frequently, until softened.
- Stir in the thawed corn and season with salt and black pepper to taste.
- Continue cooking and stirring for about 5 minutes, or until the corn is heated through.
- Stir in the fresh cilantro and let everything simmer for 30 to 60 seconds to combine the flavors.

I topped broiled tilapia, seasoned with Adobo and Smart Balance butter, with this corn mixture. I broiled the fish, then added the corn after flipping it over. The combination was delicious!
