Sautéed Asparagus and Mushrooms Recipe
Ingredients
- 1 pound fresh asparagus
- 1 tablespoon refined coconut oil
- 8 ounces sliced cremini mushrooms
- 1 clove garlic, minced
- Flaky sea salt, to taste
- Ground black pepper, to taste
Directions
Step 1: Trim the stem ends from the asparagus, then cut the spears into 1 1/2-inch pieces.
Step 2: Heat the refined coconut oil in a large skillet over medium heat. Once the oil is hot, add the sliced cremini mushrooms. Cook, stirring occasionally, until the mushrooms are just tender, about 8 to 10 minutes.
Step 3: Add the asparagus to the skillet and stir to combine. Cook for another 3 to 5 minutes, or until the asparagus is bright green and tender.
Step 4: Add the minced garlic in the last minute of cooking, stirring well.
Step 5: Season the dish with flaky sea salt and black pepper to taste. Stir again and serve warm.
Cook's Note: You can substitute olive oil for the coconut oil if you prefer.

Very easy to prep and quick to make. Love asparagus and mushrooms just give a hint of flavor. I made with EVOO only because I prefer it. Great side dish.

I just put the asparagus in the middle of the pan, mushrooms around the edge. Added 1Tb butter sprinkled with garlic salt. Turned asparagus and Bella mushrooms until cooked. Not blended until served. Very nice side dish.

Quick and easy side dish to make any unhealthy meal into a less unhealthy meal. Paired with steak or BBQ or buffalo wings, this asparagus and mushroom recipe adds fiber and nutrients to all that fat and cholesterol, so you don't need to think so much about it and can enjoy your dinner. I added red pepper flakes for a spicy kick and cut back on the salt.

First, nowhere in the recipe does it say to slice the mushrooms 1/4" thick. New cooks might be thrown off if they do not see the pics before starting to cook. Other than that, the recipe was well-balanced and easy to prepare. It was also delicious. The only thing I added was a splash of lemon at the end. I am sure my family will ask for it again. If not, I will make it again because it is a great alternative to just steaming asparagus. Thank you for posting this recipe.
