Roasted Asparagus with Parmesan Recipe

Cook Time: 15 minutes

Even the pickiest eaters will love this simple and satisfying Parmesan asparagus recipe. Best of all, it comes together quickly with just five easy-to-find ingredients.

Ingredients

  • Olive oil cooking spray (or regular olive oil for greasing)
  • 1 pound fresh asparagus, tough ends trimmed
  • cup freshly grated Parmesan cheese (pre-shredded will work too)
  • 1 teaspoon coarse sea salt (kosher salt is a fine alternative)
  • teaspoon garlic powder (adjust to taste)

How to Make Roasted Asparagus with Parmesan

  1. Preheat your oven to 400F (200C).
  2. Spray the inside of a 9x13-inch casserole dish with olive oil cooking spray, or coat it lightly with regular olive oil.
  3. Place the asparagus in the dish in a single layer, ensuring the spears are not overcrowded.
  4. Lightly spray the asparagus with more olive oil cooking spray to coat them evenly.
  5. Sprinkle the asparagus with freshly grated Parmesan, sea salt, and garlic powder.
  6. Roast the asparagus in the preheated oven for about 12 minutes, or until the thickest part of the stems can be easily pierced with a fork.
  7. Once done, remove from the oven and serve immediately. Enjoy!

How to Store Leftover Parmesan Asparagus

I used minced fresh garlic and cooked it on parchment paper on a sheet pan. It was the hit of the meal! Delightful!

I really don’t like nonstick sprays because they contain additional chemicals and they just contribute waste. So I put the spears in a long pan and very gently drizzled garlic, flavored olive oil over the top of the spears and then tossed them with tongs. Then I placed them on parchment on a jelly roll pan and sprinkled the top with freshly grated Parmesan. (Please do not use pre-shredded cheese; it contains starches that keep the cheese from sticking together, but the starches also prevent the cheese from melting.) I roast, then test. Parmesan is fairly salty. So if I think it needs additional salt, I sprinkle sea salt over the hot asparagus. It’s simple and easy. The right ingredients really matter.

Garlic was a nice add! It took 20 minutes to cook. I used shredded Parmesan. It did not melt. Gross! Next time I get a block of Parmesan and hand grate it.

Great recipe. I used fresh garlic instead of garlic powder only because of personal preference.

Very delicious. I simply love Asparagus any kind of way they're cooked. I sprayed the pan with olive oil but I also used a couple drops of EVOO while I was mixing the Asparagus in the ingredients. Also, I sprinkled minced garlic on top of them after placing them in the pan. As a bonus I added sliced mushrooms and cooked them along too. It was very good. The downside: next time I will cut down on the salt. One teaspoon was way too much. Thanks Diane for the recipe.

I used garlic-infused olive oil instead of garlic powder. Did not add salt while cooking but let everyone sprinkle with maladon salt flakes to take. That made it really special!

It's too salty.I added some ground black pepper. I used 1 clove of fresh minced garlic and sprinkled 1 Tbsp. of fresh lemon juice to brighten the flavor. With the modifications It's a very good recipe.

I rolled the asparagus in a big bowl with olive oil, salt and pepper instead of using a spray. Thanksgiving side dish, was very delightful.

Great recipe, WAY too much salt for my family. It takes away from the fresh asparagus flavor. Second time I made it with half the salt and it was perfection. TIP: if you like to crisp the parmesan, which I highly recommend to bring out it's flavor, increase the temp to 500

I made it in my toaster oven. Lined a baking tray with foil and used olive oil. Baked for 10 minutes turned once. Added the parmesan

This is my first time cooking and eating Asparagus, so I didn't know what to expect... I sprayed them with cooking spray and then seasoned them with Garlic Pepper seasoning. I only had store bought grated parmesan which is very salty so I left it out. I did like the outcome. It tasted like steamed Calaloo to my Jamaican palate. I would definitely have this again. My husband and 8yo daughter didn't care for it though.

Great recipe. We cook it this way all the time. We line the cookie sheet with a baking liner. Instead of spraying with olive oil, we use 1 tsp sesame oil

I used Romano instead of Parmesan since that's what I had, and I added some butter to help the salt and cheese stick better. It was delicious
