Instant Pot® Pineapple-Coconut-Lime Rice Recipe
Ingredients
- 1 cups uncooked long-grain white rice
- 1 cup water
- 1 (8 ounce) can crushed pineapple, undrained
- cup coconut milk
- teaspoon red pepper flakes
- 1 lime, zested and juiced
Directions
Step 1: Rinse the rice thoroughly under cold water until the water runs clear. This helps remove excess starch.
Step 2: Transfer the drained rice into the pot of an electric pressure cooker, such as an Instant Pot.
Step 3: Add the water, pineapple chunks with juice, coconut milk, and red pepper flakes to the pot with the rice.
Step 4: Close the lid of the pressure cooker and ensure it is locked in place.
Step 5: Turn on the cooker and set it to the "Manual" setting on high pressure. Set the timer for 3 minutes.
Step 6: Once the cooking time is completed, allow the pressure to release naturally for about 20 minutes.
Step 7: After the pressure has fully released, open the lid and stir in the lime zest and lime juice to enhance the flavor.

As it was written, and based on the only review, I could tell this would be a little bland. During cooking (I used a pot instead of a pressure cooker), I added salt, red peppers, lots of extra lime zest and lime juice, and cilantro (which was pictured but not included in the recipe). I also substituted the water for chicken bone stock. After all that, it was delicious! Sometimes all you need are good bones, and this recipe has good bones.

The taste was wonderful but i had to finish it in my microwave cooker because i got a burn notice on my instant pot just a few minutes in. Anyone have suggestions on how to avoid burning it?

I made this in my instant pot. 2 minutes on manual; 20 minutes natural pressure release. Added sriracha and toasted almonds at the end. It was delicious!

Not a lot of flavor as I used light coconut milk. Added salt and more lime at the end. Made it in cuisinart electric pressure cooker for 4 minutes.
