This recipe is amazing!!! One VERY important tip: Make sure your broth is room temperature when added. If it’s cold from the fridge it will not evaporate and will be much soupier.

These potatoes were excellent! I reduced the broth to 2 cups and cooked them about an hour and 10 minutes - the potatoes were cooked perfectly. There was just a tiny bit of broth left, helping to make a little sauce for the potatoes. Will be making these again.

I liked the recipe but I did make a couple of changes, I added two cloves of garlic minced and more pepper and oregano. I also combined the broth with the lemon juice mixture to pour over the potatoes. While roasting I checked on them every few minutes to toss them so that they didn't get stuck on the bottom. They turned out really yummy!

All that’s missing is the mustard. About 1/4 cup of regular prepared yellow mustard. I went out with a Greek guy who’s family owned a long-standing, very popular Greek restaurant in Vancouver, and they used dry mustard in their potatoes, but prepared yellow mustard works for me. And my brother’s friend worked at another Greek restaurant here in the Fraser Valley, and the recipe he gave me also had mustard in it. I recalled that you mix the ingredients with chicken stock and pour it over the potatoes in the baking dish/pan, and also that both restaurants covered the baking dishes with foil and baked them for a long time (I wouldn’t recommend grilling them as they need to get very soft, not crusty), but I couldn’t remember the other ingredients and the proportions, so thank you for posting this recipe!

No matter how many pounds of potatoes I cook, they’re gone and someone is wishing there were more.haha I usually serve with an herb roasted chicken thigh and a salad. It’s so hard to find dishes all five of us LOVE, so I make these at least once or twice a month. I usually cook mine for 90 minutes instead of 60.
