Really Simple Rice Recipe
This easy rice dish is perfect for a quick side or a base for your favorite dishes. Here's how to make it:
Ingredients
- 1 tablespoon olive oil
- 1 cup long-grain white rice
- small onion, minced
- 2 cups low-sodium chicken broth
- 1 pinch garlic salt, or to taste
Directions
Step 1: Heat the olive oil in a nonstick saucepan over medium-high heat until it starts to shimmer, but not smoke.
Step 2: Add the rice to the pan. Cook and stir quickly for about 2 to 3 minutes to toast the rice slightly.
Step 3: Add the minced onion and saut for 1 minute, allowing it to soften and become aromatic.
Step 4: Stir in the chicken broth and garlic salt. Bring the mixture to a boil over medium-high heat.
Step 5: Once boiling, reduce the heat to low. Cover the pan and simmer for about 20 minutes, or until the liquid is absorbed and the rice is tender.
Step 6: Remove the pan from heat and let it rest, covered, for an additional 5 minutes to allow the rice to finish cooking.
Step 7: After resting, uncover the pan and fluff the rice gently with a fork to separate the grains.

I definitely plan on making this rice dish again! I used 3 cups of uncooked rice and 5 cups of chicken broth, but otherwise I followed the recipe exactly as written and it turned out fantastic.

Perfection. I didn't have broth so I simply seasoned my water with salt before adding. I also substituted onion with sautéed garlic powder! 😋👌
