Directions

I used it as an appetizer served in small rice bowls. None was left! You can make it the day before except the cheese part. Serve right in the pan in which is cooks.

It was so tasty!!! Best recipe I've tried in a long time. I used an 8x8 Pyrex dish to bake and broil instead of a skillet, and it worked well. I gave it some extra time in the oven to compensate. I had to add rotisserie chicken for my husband - because... meat. Gruyere is expensive, so as another reviewer suggested, I may just do mozzarella next time. I'm tempted to get a crate of concentrated french onion soup so I can do this any time.

Due to my reduced salt diet, I had to make my own onion mixture as follows: 2 giant sliced onions sauteed 30 minutes at medium in 2 T fake butter product and/or oil. Add a few glugs of red wine and some sprinkles of thyme. Stir in about 1-1/2 cups of water and 3 T of cornstarch to replace the can of soup. Add in the rice and broth. Top with fake or real butter. Mine looked like it needed more water at 25 minutes (probably due to the homemade soup issue), so I sprinkled in 1 cup of water and sprinkled cheese on top. It's baking at 400 right now for 10-15 minutes to absorb the extra water and get the cheese browned. It smells heavenly. The test bite was good before I even added the extra water. I left out sherry vinegar due to red wine already in the mix.

Similar to rice pilaf, but MUCH better. Easy to make. Gruyere is traditional, but not essential. Just use all mozz.
