Cook Time: 5 minutes
Walnut, Strawberry, and Feta Salad
Ingredients:
- 1 cups walnut pieces
- 1 pint strawberries, quartered
- 1 (10 ounce) bag iceberg salad
- 1 (5 ounce) bag baby spinach
- 1 (4 ounce) crumbled feta cheese
- 1 small red onion, thinly sliced into rings
- Freshly ground black pepper to taste
Directions:
- Preheat the oven to 350F (175C).
- Spread the walnut pieces evenly on a baking sheet.
- Toast the walnuts in the preheated oven for 5 to 7 minutes, or until they turn golden brown and become fragrant. Keep an eye on them to avoid burning. Once done, remove them from the oven and let them cool for about 5 minutes.
- In a large mixing bowl, combine the toasted walnuts, quartered strawberries, iceberg lettuce, baby spinach, crumbled feta cheese, and thinly sliced red onion.
- Season the salad with freshly ground black pepper to taste.
- Toss the ingredients gently to combine, ensuring everything is well distributed.
- Serve immediately or chill in the refrigerator for a few minutes before serving, if desired.

This salad is perfect for hot summer days - it's so refreshing and delicious! I used a 50/50 salad mix and it was just perfect. My family loved it. I would recommend trying a fruity dressing to enhance the flavors of the salad.
