Low-Fat, Full-Flavor Cream of Broccoli Soup Recipe

Ingredients

  • 1 tablespoon butter
  • 4 leeks, chopped
  • teaspoon fresh ground black pepper
  • teaspoon salt
  • teaspoon ground coriander
  • 2 heads fresh broccoli, chopped
  • 1 (32 ounce) carton low-sodium chicken broth
  • 1 (12 fluid ounce) can fat-free evaporated milk

Directions

  1. Melt butter in a large pot over medium heat. Add leeks and cook until soft and translucent, about 5 minutes.
  2. Stir in black pepper, salt, and ground coriander, then continue to cook for another minute to release the flavors.
  3. Reserve about cup of the smallest broccoli florets for garnish later. Add the remaining chopped broccoli to the pot and cook until bright green, about 5 minutes.
  4. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat, cover the pot, and simmer for 10-15 minutes, or until the broccoli is very tender.
  5. Using an immersion blender, pure the soup until smooth and creamy.
  6. Stir in the reserved broccoli florets and bring the soup back to a simmer over medium-low heat. Stir often, simmering for 5-7 minutes, or until the broccoli florets are tender.
  7. Remove the soup from the heat and stir in the fat-free evaporated milk until well combined.
  8. Serve hot and enjoy!
