Low-Fat, Full-Flavor Cream of Broccoli Soup Recipe

Ingredients
- 1 tablespoon butter
- 4 leeks, chopped
- teaspoon fresh ground black pepper
- teaspoon salt
- teaspoon ground coriander
- 2 heads fresh broccoli, chopped
- 1 (32 ounce) carton low-sodium chicken broth
- 1 (12 fluid ounce) can fat-free evaporated milk
Directions
- Melt butter in a large pot over medium heat. Add leeks and cook until soft and translucent, about 5 minutes.
- Stir in black pepper, salt, and ground coriander, then continue to cook for another minute to release the flavors.
- Reserve about cup of the smallest broccoli florets for garnish later. Add the remaining chopped broccoli to the pot and cook until bright green, about 5 minutes.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat, cover the pot, and simmer for 10-15 minutes, or until the broccoli is very tender.
- Using an immersion blender, pure the soup until smooth and creamy.
- Stir in the reserved broccoli florets and bring the soup back to a simmer over medium-low heat. Stir often, simmering for 5-7 minutes, or until the broccoli florets are tender.
- Remove the soup from the heat and stir in the fat-free evaporated milk until well combined.
- Serve hot and enjoy!
