Copycat Chicken Noodle-O Soup

Cook Time: 40 minutes

Ingredients

This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.

  • 4 cups organic chicken broth
  • 4 cups water
  • cup diced carrots
  • teaspoon chicken soup base (such as Better than Bouillon)
  • teaspoon dried marjoram
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • cup ditalini pasta
  • cup chopped cooked chicken
  • 1 teaspoon lemon juice, or to taste

Directions

Follow these steps to prepare this delicious dish:

  1. In a large pot, bring the chicken broth, water, diced carrots, chicken soup base, marjoram, thyme, and onion powder to a boil over medium-high heat.
  2. Once the mixture reaches a boil, reduce the heat and let it simmer for about 15 minutes, allowing the flavors to meld.
  3. After simmering, add the ditalini pasta to the pot and return to a boil. Cook the pasta for approximately 15 minutes until al dente.
  4. Turn off the heat and stir in the chopped cooked chicken and lemon juice. Adjust the seasoning with more lemon juice if desired.

Cook's Note

I use pasta rings, which are similar to ditalini. They can be found online as an alternative to ditalini pasta.
