Copycat Chicken Noodle-O Soup

- 4 cups organic chicken broth
- 4 cups water
- cup diced carrots
- teaspoon chicken soup base (such as Better than Bouillon)
- teaspoon dried marjoram
- 1 teaspoon dried thyme
- 1 teaspoon onion powder
- cup ditalini pasta
- cup chopped cooked chicken
- 1 teaspoon lemon juice, or to taste
Directions
Follow these steps to prepare this delicious dish:
- In a large pot, bring the chicken broth, water, diced carrots, chicken soup base, marjoram, thyme, and onion powder to a boil over medium-high heat.
- Once the mixture reaches a boil, reduce the heat and let it simmer for about 15 minutes, allowing the flavors to meld.
- After simmering, add the ditalini pasta to the pot and return to a boil. Cook the pasta for approximately 15 minutes until al dente.
- Turn off the heat and stir in the chopped cooked chicken and lemon juice. Adjust the seasoning with more lemon juice if desired.
Cook's Note
I use pasta rings, which are similar to ditalini. They can be found online as an alternative to ditalini pasta.
