Original recipe (1X) yields 14 servings:

  • 1 tablespoon olive oil
  • 2 pounds bulk Italian sausage
  • 2 (32 ounce) cartons chicken broth
  • 2 (15 ounce) cans cannellini beans, rinsed and drained
  • 1 head escarole, chopped
  • 1 (15 ounce) can tomato sauce

Directions

  1. Heat the olive oil in a stockpot over medium heat.
  2. Add the Italian sausage to the pot and cook, stirring occasionally, until the sausage is evenly browned and crumbly, about 5 to 10 minutes.
  3. Once the sausage is cooked, add the chicken broth, rinsed cannellini beans, tomato sauce, and chopped escarole to the pot.
  4. Stir everything together, bring to a simmer, and cook for 15 to 20 minutes, allowing the flavors to meld and the escarole to soften.
