Quick and Super Easy Chicken and Dumplings Recipe

Cook Time: 15 minutes

Ingredients

  • 2 cups biscuit baking mix
  • cup milk
  • 2 (14 ounce) cans chicken broth
  • 2 (10 ounce) cans chunk chicken, drained

Directions

  1. In a medium bowl, stir together the biscuit mix and milk until a dough forms. Set it aside.
  2. Pour the chicken broth into a saucepan, add the drained chicken, and bring it to a boil.
  3. Take a small handful of biscuit dough and flatten it in your hand. Tear off 1- to 2-inch pieces and drop them into the boiling broth. Ensure that each piece is fully immersed in the broth, at least briefly.
  4. Repeat the process with the remaining dough pieces, then carefully stir the soup to ensure the dumplings are covered by the broth.
  5. Cover the saucepan and let the mixture simmer over medium heat, stirring occasionally, until the dumplings are cooked through, which should take about 10 minutes.

I have never made dumplings before even though I love them. The biscuit mix was too sticky so next time I would use a little less milk and an oiled cookie scoop. I used a 32 oz box of low sodium chicken broth and the extra liquid was perfect since I added one cup of frozen peas and carrots. I call what I made Chicken and Dumpling Stew and plan on making it often. So easy and delicious!

I just made this tonight. I used 1 1/8 cup biscuit mix and 1/3 cup water for the two of us. I used this as a starter recipe and diced some raw carrot, onion, celery, a dash of poultry seasoning and some ground pepper and threw all in a pressure cooker with a 12.5 ounce can of chicken chunks and 1 cup chicken broth and cooked it for 5 minutes at number 10 pressure. Then I cooled it down immediately (did not drain), put it back on the burner, added another cup of chicken broth (I just used the cubes and water) and brought it to a boil and added the dumplings. I covered the pot (with a regular lid) and simmered it for 10 minutes and it turned out great. I did add a little cornstarch mixed with a small amount of cold water. Perfect and delicious! Thank you for this great basic recipe that can be suited to taste. My husband loved it, too.

Amazing with a few additions: I diced 1 onion and sliced 3 carrots and cooked them in ½ a stick of butter until soft. Then added the broth and canned chicken. Then added biscuits from a can that I tore in pieces. **I did not like the batter biscuits and actually removed them and added the canned biscuits. I added more broth throughout the process and added cooked noodles, as well. When I pulled it off heat I added ½ cup of heavy cream and peas. Delicious!!!

I rated 4 stars, not because the end result I made wasn't good, but because had I not tweaked like others and included some chopped carrots, celery, onion, garlic, and tarragon, it would have been decidedly bland. Adding the extra items didn't really add any time to the meal over all, as I just did the dicing first, and made the dough while the pot was working up to a boil. All the kids liked it, and they are picky eaters. Most importantly, the wife liked it, and she grew up eating this stuff in NC from a family recipe!

Like others, I used real chicken breast. I boiled 4 breast for 30 minutes, removed the breast and let them cool a bit. While the chicken was cooling I sauteed carrots, celery and onion in a little olive oil. I then added the veggies to the water that the chicken was boiled in, along with the cut up chicken. I used the canned biscuits, tearing them into fourths. I had to add a little chicken broth after adding the dumplings. Delicious!!!

So the chicken I laid out ended up having freezer burn, so I had to come up with something quick. We had been out of town and I didn't have much in the pantry and no meat in the freezer. Looking through everything I found a 10oz can of chicken breast. I put that in Google and found this recipe. I knew I had Bisquick, milk and 1 can of chicken broth. I also had a can of cream of chicken soup, carrots, celery, onion, and spices. I improvised. I used all of the above. First I sauted the veggies and chicken in butter. I added onion salt, garlic powder and pepper. I added both cans of soup. I filled the cream soup can up with water 2 times to give more juice. Then did everything else the same. My whole family (husband and 4 kids) LOVED it! We only had enough for each person to have 1 serving and they were bummed. They told me to make it exactly the same again but double it.

My hubby requested chicken and dumplings, which is something I have never made nor ate before. I found this recipe and took the plunge. I boiled 2 boneless, skinless chicken breasts in water/chicken broth. Once those were done I shredded them, seasoned generously with garlic powder, Lawry's, garlic salt and pepper and put them aside. In the pot, I left the water/chicken stock that was already there and added a bit more broth. When the broth came to a boil I added 1/2 bullion cube and the chicken. I also used the Bisquick mix for the dumplings. It came out SO good that my kids (6.5 and 3.5) gobbed it up and the hubs said it was better than his mom's :) Definitely a keeper!

Super good! I served to my DH and he said "we need to make this more often!" The only changes I made was to chop up some carrots and celery and saute them before adding the broth (1 32oz container). I did use bisquick mix and baked 1lb of chicken that I shredded and added when I added the dough. It was amazing! Thanks for posting.

loved it, followed others & sauteed onions, peppers, celery, garlic & mixed frozen veggies. Added salt, pep, cayenne & 21 season salute. used 1 can cream chix soup, 12.5 can chix & 1/2 container of biscuits ripped into 4ths. Also used 32oz of chix broth & some leftover plain greek yogurt. Came out fantastic.

My pickie 15 yr old ate it and my fiance loved it also and i didnt make enough of this and was requested to make again very soon. she was right on the money with how easy to make. My soon to be 3 yr old wanted more and she was not too happy when she found it gone. making again very soon

We really liked this recipe. I made some adjustments that didn't add much time. 1. In sauce pan I cooked 1 onions, celery and carrots with a half a stick of butter. 2. Added 1 tsp. sage, 1 tsp. thyme, 1 tsp. rosemary and 2 bay leaves. 3. Used boneless skinless chicken thighs.

I used per made biscuit in the can/tube and instead of canned chicken just some shredded chicken ( rotisserie or crock-pot i had crock-pot leftovers). My family LOVED it!

I was so hungry for real home made chicken and dumplings and the “easy” part really appealed to me! I used a famous restaurants herbed biscuit mix and threw in a bag of the steam in the bag corn, green bean and carrot mix. ( I cooked it first). As advertised it was super easy and delicious! It reminded me of mom’s and grandma’s cooking. That is a very good thing.

This recipe is amazing!!!!! Easy prep, easy cook, easy cleanup! It's such an easy recipe that you can modify it to please your own tastes. I added chopped onions, carrots, and celery. I also cooked fresh chicken myself. I simply used boneless skinless chicken breast and cubed it. worked perfectly! My parents loved it and were asking for more. I will definitely be making this recipe again!
