Sun-Dried Tomato Basil Orzo Recipe

Ingredients

  • 2 cups dried orzo pasta
  • cup chopped fresh basil leaves
  • cup chopped oil-packed sun-dried tomatoes
  • cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • teaspoon salt
  • teaspoon ground black pepper

Directions

  1. Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally, until tender but firm to the bite, about 8 to 10 minutes. Drain and set aside.
  2. In a food processor, combine basil leaves and sun-dried tomatoes. Pulse 4 to 5 times until the mixture is well-blended.
  3. In a large bowl, toss the cooked orzo with the basil-tomato mixture, grated Parmesan, olive oil, salt, and pepper. Stir until well combined.
  4. Serve immediately while warm, or chill for later serving. Enjoy!
