Sun-Dried Tomato Basil Orzo Recipe
Ingredients
- 2 cups dried orzo pasta
- cup chopped fresh basil leaves
- cup chopped oil-packed sun-dried tomatoes
- cup grated Parmesan cheese
- 2 tablespoons olive oil
- teaspoon salt
- teaspoon ground black pepper
Directions
- Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally, until tender but firm to the bite, about 8 to 10 minutes. Drain and set aside.
- In a food processor, combine basil leaves and sun-dried tomatoes. Pulse 4 to 5 times until the mixture is well-blended.
- In a large bowl, toss the cooked orzo with the basil-tomato mixture, grated Parmesan, olive oil, salt, and pepper. Stir until well combined.
- Serve immediately while warm, or chill for later serving. Enjoy!
