Chicken, Avocado, and Bacon Lettuce Wrap Recipe

Ingredients

  • 2 slices bacon
  • cup shredded rotisserie chicken
  • Coarse salt and ground black pepper to taste
  • 1 avocado
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 tomato, chopped
  • 1 onion, chopped
  • 2 lettuce leaves, or as needed

Directions

  1. Place bacon in a large skillet over medium-high heat. Cook, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon on paper towels, reserving the grease in the skillet.
  2. Add shredded chicken to the skillet and stir to coat in the bacon drippings. Season with salt and pepper to taste.
  3. In a separate bowl, mash the avocado and season with lemon juice, minced garlic, salt, and pepper. Stir in chopped tomato and onion to taste.
  4. Take the lettuce leaves and divide the cooked bacon, seasoned chicken, and avocado mixture among them. Wrap the leaves around the filling and enjoy!

Simple and delightful! My husband isn't a fan of tomatoes, so I substituted salsa instead. Although I enjoy tomatoes, I must confess that I believe the salsa elevated the dish with more flavor. It's a fantastic way to repurpose leftover chicken!
