Chicken, Avocado, and Bacon Lettuce Wrap Recipe

Ingredients
- 2 slices bacon
- cup shredded rotisserie chicken
- Coarse salt and ground black pepper to taste
- 1 avocado
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 tomato, chopped
- 1 onion, chopped
- 2 lettuce leaves, or as needed
Directions
- Place bacon in a large skillet over medium-high heat. Cook, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon on paper towels, reserving the grease in the skillet.
- Add shredded chicken to the skillet and stir to coat in the bacon drippings. Season with salt and pepper to taste.
- In a separate bowl, mash the avocado and season with lemon juice, minced garlic, salt, and pepper. Stir in chopped tomato and onion to taste.
- Take the lettuce leaves and divide the cooked bacon, seasoned chicken, and avocado mixture among them. Wrap the leaves around the filling and enjoy!

Simple and delightful! My husband isn't a fan of tomatoes, so I substituted salsa instead. Although I enjoy tomatoes, I must confess that I believe the salsa elevated the dish with more flavor. It's a fantastic way to repurpose leftover chicken!
