Roasted Mushroom Soup Recipe
Ingredients
This recipe yields 4 servings. Ingredient amounts are automatically adjusted based on serving size, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.
- 1 (8 ounce) package fresh mushrooms, halved
- 3 cloves garlic, minced, divided
- 1 teaspoon rosemary
- teaspoon salt
- 3 tablespoons olive oil
- 2 tablespoons butter
- 2 onions, sliced
- 1 teaspoon chopped fresh thyme
- cup heavy cream, divided
- 1 (14.5 ounce) can chicken broth
- cup milk
- teaspoon ground black pepper
Directions
Step 1: Preheat the oven to 400F (200C).
Step 2: In a bowl, combine the mushrooms, 1 clove of minced garlic, rosemary, and salt. Drizzle olive oil over the mixture and toss to coat evenly. Transfer the mushrooms to a baking sheet.
Step 3: Roast the mushrooms in the preheated oven for about 15 minutes, or until they are golden brown.
Step 4: While the mushrooms are roasting, melt butter in a large saucepan over medium heat. Add the sliced onions, the remaining minced garlic, and thyme to the melted butter. Cook and stir until the onions are completely soft, about 7 to 10 minutes.
Step 5: Once the mushrooms are done roasting, combine the mushroom mixture and the onion mixture in a blender or food processor. Add about half of the heavy cream and blend on low until combined, but slightly chunky.
Step 6: Pour the blended mixture back into the saucepan. Stir in the remaining heavy cream, chicken broth, milk, and black pepper. Bring the soup to a simmer and cook for at least 15 minutes to allow the flavors to meld together.

You can use any combination of mushrooms you like, such as white button, cremini, and shiitake.
