Fresh Tomato Basil Pasta

This simple and flavorful recipe brings together ripe tomatoes, fresh basil, and garlic to create a refreshing cold pasta dish. Perfect for warm days or when you want a quick and satisfying meal. Serves 4 people.

Ingredients:

  • 4 ripe tomatoes, peeled and seeded
  • cup chopped fresh basil
  • 3 cloves garlic, peeled
  • 1 teaspoon olive oil
  • teaspoon white sugar
  • 1 (8 ounce) package uncooked spaghetti
  • cup shredded Parmesan cheese

Directions:

  1. Combine the tomatoes, basil, garlic, olive oil, and sugar in a blender or food processor. Blend until smooth.
  2. Transfer the sauce to a bowl, cover, and refrigerate for at least 30 minutes to let the flavors meld together.
  3. Bring a large pot of lightly salted water to a boil. Add the spaghetti and cook for 8 to 10 minutes, stirring occasionally, until tender yet firm to the bite.
  4. Drain the pasta and return it to the pot. Pour the chilled tomato sauce over the pasta and toss to coat evenly.
  5. Serve the pasta in bowls, topping each serving with freshly grated Parmesan cheese.
