Fresh Tomato Basil Pasta
This simple and flavorful recipe brings together ripe tomatoes, fresh basil, and garlic to create a refreshing cold pasta dish. Perfect for warm days or when you want a quick and satisfying meal. Serves 4 people.
Ingredients:
- 4 ripe tomatoes, peeled and seeded
- cup chopped fresh basil
- 3 cloves garlic, peeled
- 1 teaspoon olive oil
- teaspoon white sugar
- 1 (8 ounce) package uncooked spaghetti
- cup shredded Parmesan cheese
Directions:
- Combine the tomatoes, basil, garlic, olive oil, and sugar in a blender or food processor. Blend until smooth.
- Transfer the sauce to a bowl, cover, and refrigerate for at least 30 minutes to let the flavors meld together.
- Bring a large pot of lightly salted water to a boil. Add the spaghetti and cook for 8 to 10 minutes, stirring occasionally, until tender yet firm to the bite.
- Drain the pasta and return it to the pot. Pour the chilled tomato sauce over the pasta and toss to coat evenly.
- Serve the pasta in bowls, topping each serving with freshly grated Parmesan cheese.
