Homemade Albondigas Soup Recipe
Ingredients
This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly. Original recipe (1X) yields 6 servings.
- 1 pound ground beef
- 1 bunch cilantro, finely chopped
- 1 small onion, chopped
- 4 cloves garlic, minced
- 1 pinch garlic salt
- 1 pinch onion powder
- Salt and ground black pepper to taste
- Cooking spray
- 4 (14.5 ounce) cans chicken broth
- 4 large carrots, cut into 1/2 inch pieces
- 3 stalks celery, cut into 1 inch pieces
- 3 potatoes, cubed
Directions
- Gather the ingredients and prepare them for cooking.
- In a large bowl, combine the ground beef, half of the chopped cilantro, half of the chopped onion, minced garlic, garlic salt, and onion powder. Season with salt and black pepper. Mix gently until all ingredients are well combined.
- Shape the meat mixture into small meatballs, roughly the size of golf balls.
- Coat a large skillet with nonstick cooking spray and heat over medium-high heat. Place the meatballs in the skillet and cook, turning occasionally, until they are browned on all sides. Once browned, remove the meatballs and set them aside on a plate. (The meatballs do not need to be fully cooked as they will continue cooking in the soup.)
- In the same skillet, add the remaining chopped onion and cook over medium-low heat for 8 to 10 minutes, stirring occasionally, until the onion becomes translucent.
- Transfer the cooked onion to a large pot. Add the chicken broth, carrots, celery, and potatoes to the pot. Bring the mixture to a boil over high heat, then reduce the heat and let it simmer until the potatoes are almost tender, about 15 minutes.
- Once the potatoes are nearly tender, add the browned meatballs and the remaining chopped cilantro to the pot. Continue simmering for an additional 30 minutes, allowing the flavors to meld and the meatballs to fully cook.
- Season the soup with salt and black pepper to taste, then serve hot. Enjoy!

I make this soup for my grandaughter. This is my addition When i was a kid 55+ years ago, my aunt made this soup with this major change which i do also each tiime I make it . I add uncooked white rice into the meat mixture (it will cook while the meat balls are boiling in the broth) oh by the way, add cumin it gives it a more of a Mexican taste. I to top it with fried corn tortilla ribbons,and jack cheese enjoy Mike

This is one of the ultimate Mexican comfort foods and you don't have to be Mexican to enjoy it! It is food fit for royalty and the common man alike. It ranks right up there with your Mama's chicken soup. It will cure anything, even baldness. Eat it hot, add hot sauce or hot chilies or menudo mix or chilipiñas to spice it up if that's your style, with warm corn tortillas on the side, and you will find yourself in heaven! My dear mother-in-law made this for me whenever we visited, and she will forever hold a special place in my heart. My wife made a special point of learning how to make this (and other great recipes, and it has contributed greatly to a happy and lasting marriage. It is true that a woman's way to winning a man is through his stomach ... and it is a man's way of gaining a woman's love is to appreciate her cooking and her efforts to please him. Which is to say that it is a two-way street. Try this recipe, you'll enjoy it!

I admit. I was skeptical about this recipe, but it was very easy and delicious. The only adjustment I made was to add 1 tsp cumin and 1 egg to the meatball mixture. I chose to brown the meatballs in the over at 350 for 15 mins instead of pan frying (less messy). I served this with chopped fresh avocado and a squeeze of fresh lime. Very tasty. I will definitely make this again.

Have been looking for a recipe because this was a meal that my aunt used to make. Has great flavor! I did make some changes: instead of the seasonings mentioned I just used Weber Hamburger Seasoning for the meatballs, as it provided a little kick to them. I also baked them in the oven instead of frying them. This way they were tender and juicy all over, and I avoided the hard bits you get from frying in a pan. I baked them at 375F for about 30 min. I would probably add some Knorr Caldo de Pollo to the broth next time, just to give it a little more flavor. Since I served it with cooked white rice, I omitted the potatoes. The family loved it! Will definitely make again!

I always wanted to learn to make this one. Now I can! I changed it around some by first doubling the ingredients. I also added about 1/2 teaspoon red pepper flakes to the meat and add the same to the broth. Then, I added 1/4 cup of oatmeal flakes to the meat as to increase the number of meatballs. I also added an entire 14 oz can of drained garbanzo beans to the broth for a Menudo effect. I seasoned the broth with 2 bay leaves, 1/4 teaspoon of cumin and 1/2 teaspoon of Mexican oregano. I served it once with a scoop of rice in the bowl (which was great) and served it later with a topping of avocados, lime twists, sour cream and Monterey Jack cheese. It is great with all of these toppings. One of the best soups/stews that I have ever had. Homemade soup beats canned soup every time! This is a highly nutritious dish, looks and tastes great. My first batch yielded 1 gallon and it lasted 3 days. This is a wonderful recipe that I am surprised is not making the rounds in the Mexican restaurants!

This was delicious! It takes me back to my childhood and reminds me of the soup my grandmother makes. The only thing I changed based off the tips from other viewers is I used 1/3 cup of italian bread crumbs and 1/3 cup milk in the meatballs. I also add 1 egg white to help the meat stay together. You can use a whole egg but you really don't need to. I also added 1/2 cup of salsa into the soup in the last 30 minutes of cooking. I should mention that I doubled the recipe so you can cut these measuremeants in half if follwing exactly. I wouldn't do anything different next time. I think this added just the right flavor.

This recipe is excellent, however I do cheat in order to easily make it after a long work day as a healthy family meal. I buy premade, low fat angus steak meatballs that are kept in the freezer. I use a little olive oil to fry up a couple of onions, add the carrots and then the celery. Then I add the no salt added broth, the potatoes, frozen meatballs and bring to boil and simmer. Add pepper to taste. Finally I add either frozen spinach and cook for a few more minutes or fresh spinach 5 minutes to serving. Excellent!

The best!! I added 1 egg and 1/2 cup of bread crumbs to the meatballs. They held together perfect. I also added zucchini and some hatch chilies to the soup. Then I put 1/2 cup of rice on the bottom of our bowls, ladeled the soup over it, and topped it with crushed tortilla, jack cheese, avocado and cilantro! Will make this soup often! This is a great base recipe but i did add a lot of stuff to it I added Mexican oregano to the broth a little cumin and chili flakes along with frozen corn and zucchini for the meatballs I did exactly as suggested but added half chorizo and half beef to help flavor the broth also I add in cooked rice to the meatballs. I add a little rice to the bowl and top with fresh cilantro and a squeeze of lime

I doubled recipe, i didn't use the onion powder and instead of using potatoes, I made Spanish rice on the side and poured soup over the rice in individual each bowls; that keeps the rice from getting mushy if added directly to pot of soup. I also used a bag of baby carrots instead of regular carrots

Made this soup 2 days ago cut up one small tomato with seeds out, also one small can of tomato sauce in the broth makes it a little bit more tasty also zucchini and cut up cabbage

Too many changes to name but when you make it your own it’s a pretty good soup. Made as is you get a bland soup. But to each their own.

As written, this soup is good. However, it could benefit in flavor from a few added spices like oregano, cumin, etc. I've never had authentic Albondigas soup, so maybe this version is that...it's just kind of bland for my taste. I did add a bit of panko to the meatballs as a binder, as the recipe didn't call for anything. I think my husband will enjoy this soup though.
