Chef John's Chicken Satay Burger Recipe
Ingredients
- 2 tablespoons peanut butter
- 2 teaspoons Asian chili pepper sauce (such as sambal oelek), or to taste, divided
- 1 teaspoon lime juice
- cup finely julienned (matchstick) carrot
- cup finely julienned (matchstick) cucumber
- 2 tablespoons finely julienned (matchstick) jalapeo pepper
- 1 tablespoon seasoned rice vinegar
- 2 teaspoons fish sauce
- 3 cloves garlic, minced
- 2 tablespoons chopped fresh basil
- 1 tablespoons coconut milk
- 1 tablespoon dry bread crumbs
- 2 teaspoons soy sauce
- teaspoon ground cumin
- teaspoon ground turmeric
- 1 pound ground chicken
- 1 pinch cayenne pepper, or to taste
- Salt to taste
- 4 hamburger buns
- cup cilantro leaves
Directions
- In a small bowl, combine the peanut butter, 1 teaspoon of chili sauce, and lime juice. Stir until thoroughly blended and set aside.
- In another bowl, mix together the julienned carrot, cucumber, and jalapeo. Stir in the vinegar and fish sauce. Set aside for the slaw.
- In a separate large bowl, combine garlic, basil, coconut milk, bread crumbs, soy sauce, the remaining 1 teaspoon of chili sauce, cumin, and turmeric. Add the ground chicken and mix until well combined (the mixture will be soft).
- To test the chicken mixture, fry a small piece in a nonstick skillet over medium heat until browned and no longer pink. Taste and adjust seasoning with cayenne pepper and salt as needed. Make sure not to eat raw chicken.
- Form the chicken mixture into 4 patties, about of the mixture per patty. In the same skillet, cook each patty for 5 minutes on one side, until browned, then flip and cook for another 5 minutes, or until browned and cooked through.
- While the patties cook, spread 1 teaspoon of the peanut butter mixture onto the bottom half of each bun.
- Once the patties are done, assemble the burgers. Place a chicken patty on each bottom bun, followed by of the carrot slaw and 1 tablespoon of cilantro leaves.
- Top with the bun's top half and serve immediately.

I make lunch for my aging father 2-3 times a week. I try something new each time to keep him interested in eating. My father isn't very verbal so I don't expect much thanks although I know deep down he appreciates my effort. With that being said, I dropped this meal off and left to do errands. Imagine my surprise when I returned to find a hand-written note from Dad telling me it was "Very good baby girl!" (yes it had an exclamation point) I didn't change a thing and now every other Saturday is now known as "Satay Saturday" per my Dad's request. Thanks Chef John.

Fantastic, and very good and different flavors. Similar to a 'Bahn Mi' sandwich I had to make a few substitutions: I didn't have a can of coconut milk, nor would I open one for a mere 1.5 T, so I used half and half, and about 1/4 cup of shredded sweetened coconut that I keep for baking. I used dried basil (2 tsp), & didn't use the fish sauce (blech!), and I used a brioche bun which gives it a bit of a sweeter counter to the chili powder/jalapeno. Tip, you don't have to shape the patties with your hands. Just shape them with your flipper. I didn't realize this until I read the recipe again, the following day. Duh!! Otherwise the raw mixture is very sticky to handle.

Loved it! I didn't have hamburger buns, so I shaped the meat mixture into sort of a flat hot dog shape, cooked it, then rolled it in Asian rice paper like a spring roll. I put the carrot/cucumber slaw inside and rolled it up tight. It made it really easy to eat and dip in the peanut sauce and the flavor was out of this world. Really great and pretty straightforward. I also added chopped mint to the meat mixture which added to the flavor. Thanks, John, for this recipe. It's a winner no mater how you shape it. Next time I might make it into meatballs and toss the peanut sauce with some pasta and the slaw on top.

it took a little time having three different steps but well worth it. I added a little bit of sweetener to the satay sauce as well as the slaw marinade. To make it low carb, I ate it on a bed of chopped salad mix topped with the slaw, burgers and satay sauce- it was awesome!

Flavor profile of the patty was nice; it had a great complexity of pleasing warming spices without being hot. Satay sauce I tweaked and added a couple tablespoons of coconut milk to balance out the flavors. I didn't end up doing the slaw because my dining companion is picky, but I trimmed it down to carrots and scallions. I'll make this again

I didn't read the recipe through and cooked all the ingredients together. Hah. I also made several changes. I used peanut powder instead and celery as opposed to cucumber. Still turned out pretty tasty.

My family loves this recipe. It is always a win, even with pickiness! The ONLY change I make is omitting the fish sauce because my daughter would freak out (I love fish sauce). We eat this with no bun and a big Asian-inspired salad on the side--lettuce, pea pods, oranges, green onion, almonds, and crunchy noodles. I should have taken a picture! The burgers are so pretty with a smear of peanut sauce, a pile of the carrot mixture, and some cilantro. YUM! Low carb and full of flavor. Also, if you like to cook Asian food, you would already have most of the ingredients in the fridge and pantry. We use ground turkey, by the way...only because I think it has more flavor than chicken.

Absolutely delicious! I was in the need to find a new way make a ground chicken burger! I loved everything about the flavors! I did add a bit more sambal to the peanut butter spread! I also needed a substitute for the fish sauce...( it is not sold in my neck of the woods) so I used a splash of soy sauce and Worcestershire sauce! It was delicious! Also to the slaw I added thin sliced red onion....the slaw with cilantro on top gave it a refreshing taste! We ate them before I was able to snap a pic!

Definitely a keeper. My family loved this recipe. I tripled the peanut butter spread part of the recipe because my family likes spreads on their burgers and ate them on sourdough rounds rather than hamburger buns.

Great flavors and easy enough! I just ate the patties with the topping. Great cucumber pickled salad! Fish sauce is such a superstar ingredient!

We thought this was pretty good, though we did make a different satay sauce since this one seemed waaaaay too bare bones. Cooking times were right and with a simple salad on the side this was a nice light meal.

Yum. We were short a few ingredients like lime and cilantro. And I was hesitant to open a can of coco milk for just 1.5 tablespoons. But this recipe did not disappoint. Very tasty. This is going into our rotation.

Super good. Unique tastes for a nice change of pace. I added some green onion to the "slaw". Don't be afraid to spice it up a bit if you like things more on the hot side.

We really liked this. We do like our food with a little more heat. There were no leftovers, but we will add more sambal oelek to the peanut butter spread next time.
