Coleslaw with Apple Cider Vinegar and Buttermilk

Ingredients

  • 3 tablespoons apple cider vinegar
  • 3 tablespoons buttermilk
  • cup mayonnaise
  • cup light brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon chopped fresh parsley
  • 1 teaspoon salt
  • cup diced onion
  • 1 (16 ounce) package coleslaw mix

Directions

  1. In a large mixing bowl, whisk together the apple cider vinegar, buttermilk, mayonnaise, and light brown sugar. Continue whisking until the sugar is fully dissolved into the mixture.
  2. Once the sugar is dissolved, stir in the Dijon mustard, chopped parsley, and salt. Make sure everything is well combined.
  3. Add the diced onion and the coleslaw mix to the bowl. Stir until the coleslaw mix is fully coated with the dressing.
  4. Cover the bowl and place it in the refrigerator. Let the coleslaw chill for at least 15 minutes before serving. This helps the flavors to meld together for a better taste.

Absolutely fantastic! After trying this recipe, I don't think I can go back to store-bought dressings. I made some substitutions since I was missing a few ingredients. Rewritten review: I absolutely love this coleslaw! The dressing is delightfully tangy with a subtle kick from the dijon mustard. While many reviewers skipped the buttermilk, I personally believe it adds a great depth of flavor to the dish. The only adjustment I made was creating my own coleslaw mix using fresh produce - half a small red cabbage, half a medium green cabbage, and two large carrots. I thinly sliced the cabbage using a mandolin and julienned the carrots. My husband tasted it before dinner and questioned why we ever bought coleslaw from the store. We definitely won't be doing that anymore!

This recipe is fantastic! I used it as a base and made a few modifications. Since I didn't have buttermilk on hand, I substituted 3 tablespoons of light sour cream and a teaspoon of Half n Half. I opted to skip the onion but included about half a teaspoon of celery seed, a little trick I learned from my mom. Overall, a delicious dish!

This dish is sure to be a hit with a crowd! I followed all the helpful comments from other reviewers, and even though I didn't have buttermilk, it turned out wonderfully. I was pleasantly surprised that it didn't require celery seed, so I omitted it. I only had a 14 oz bag of fresh parsley instead of the called-for amount, and I was a bit short on each ingredient, but it all worked out perfectly.
