Leftover Pork Fried Rice Recipe
Fried Rice with Pork and Eggs
This quick and flavorful fried rice is packed with pork, eggs, and veggies, making it a hearty and satisfying meal. Perfect for using up leftover rice!
Ingredients
- 3 large eggs
- 1 tablespoon soy sauce
- 3 tablespoons butter
- 6 cloves garlic, chopped
- 4 green onions, chopped (separate white and green parts)
- cup frozen mixed peas and carrots
- onion, thinly sliced
- 2 cooked pork chops, meat cut into -inch pieces, bones discarded
- 2 cups cooked rice
- Salt and freshly ground black pepper to taste
Directions
Step 1: In a bowl, whisk together the eggs and soy sauce. Stir in the cooked rice, breaking up any clumps. Set aside.
Step 2: Heat a wok or large pan over medium-high heat and melt the butter. Add the chopped garlic, the white part of the green onions, mixed peas and carrots, and sliced onion. Stir-fry for about 3 minutes, or until the vegetables begin to soften.
Step 3: Add the pork pieces to the wok and stir them in with the vegetables.
Step 4: Pour the egg and rice mixture into the wok. Stir-fry everything together, cooking the eggs through and allowing the rice to turn golden. This should take about 7 minutes. Ensure all ingredients are hot and well-mixed.
Step 5: Season the dish with salt and freshly ground black pepper to taste. Garnish with the green parts of the chopped green onions.
Cooks Note:
Blending the eggs with the rice not only makes the dish more flavorful, but it also gives the rice a beautiful golden color.
