This is a good solution if you happen to run out of baking powder but there is a difference between double action and this single action recipe. The absence of calcium acid phosphate and sodium aluminum sulfate make this recipe "single action". When these ingredients are heated you have a higher rise in your baked goods. This recipe is successful but you must get your baked goods into the preheated oven immediately to get the most rise possible. The corn starch is present only to help with incorporation and if you make a large quantity it keeps it from clumping together. It will loose its effectiveness so large quantity storage is not recommended. I have used this recipe with good success (but, it was a fail when making light and fluffy biscuits. They require double action powder) and it is easy enough to put together I see no need to make larger amounts. This is also a good recipe if you wish to avoid aluminum in your diet as commercial double action baking powder is made with it.

Used this for my waffles. Worked fairly well. Like other users said, cook immediately. It’s essentially the same idea as lemon juice and baking soda. Mixing an acid and an alkaloid to get the chemical reaction to produce carbon dioxide gas, I believe. So, you can also sub the cream of tartar with lemon juice… keep them separate until you combine the dry mix with the wet mix and then cook immediately. A little hint of lemon in pancakes is quite nice if you are planning to use powdered sugar and berries or a fruit compote.

I ran out of baking powder and needed a quick fix. I found this recipe and use it a lot. I will NEVER buy baking powder again! Taste better and have better rise than with aluminum added baking powder. My family is very happy with the results!

I’m not sure the opposition to using this in something like biscuits. I made it specifically to use in biscuits, and they were fluffy and moist compared to when using store bought baking powder which leaves my biscuits dry and barely rise.

Recipe is perfect for when no baking powder is ready to use. I have made it only once, (which is pretty lucky, considering that means I have had baking powder on hand when needed, for the most part). USE THIS RECIPE! Works like a charm! :)
