Crispy Chinese Noodles Recipe
Egg Roll Strips
Ingredients
- 1 (10 ounce) package egg roll wrappers
- 2 cups vegetable oil, or as needed
Directions
Step 1: Gather all ingredients.
Step 2: Cut the egg roll wrappers into 1-inch strips.
Step 3: Heat a wok over medium heat until very hot. Pour the oil into the wok and allow it to heat until shimmering. To check if the oil is ready, dip the tip of a wooden chopstick into the oil. If it bubbles vigorously, the oil is hot enough for frying.
Step 4: Gently place 2 to 3 strips of the egg roll wrappers into the hot oil. Cook until the strips begin to brown on one side, about 30 seconds to 1 minute.
Step 5: Flip the strips gently and continue to cook until they are crispy and golden brown on all sides, another 30 seconds to 1 minute.
Step 6: Using a slotted spoon, transfer the fried strips onto a paper towel-lined plate to drain excess oil. Repeat the process with the remaining strips.

History and Origins
Crispy Chinese noodles have long been a beloved snack and accompaniment in Chinese cuisine, though their origins remain somewhat elusive. These crispy treats are often associated with the crispy noodles served in Chinese-American restaurants, especially in dishes like "crispy wonton soup" or as garnishes for salads and soups. It is believed that these noodles were created as a way to repurpose leftover egg roll wrappers. The texture and flavor were highly praised by diners, and soon, these crispy strips became a staple in Chinese-American cuisine.
Regional Features
Although crispy noodles are most commonly associated with Chinese-American cuisine, variations of fried noodles can be found throughout China. In southern China, particularly in Cantonese cuisine, crispy fried noodles are often used as a garnish for stir-fries or as part of more complex noodle dishes. In contrast, northern regions may feature thinner, crispier noodles, which are sometimes dusted with a light seasoning like five-spice powder for added flavor. These regional variations highlight the adaptability of fried noodles in Chinese cooking.
Differences from Similar Dishes
Crispy Chinese noodles are distinct from other types of fried noodle dishes, such as chow mein or lo mein. While dishes like chow mein feature stir-fried noodles with vegetables and sauce, crispy Chinese noodles are deep-fried and left to crisp up, often without any additional seasoning or sauce during the frying process. Unlike crunchy chow mein noodles, which retain some flexibility, crispy noodles are meant to be completely crunchy and crisp, perfect for dipping or garnishing dishes.
Where Are They Typically Served?
Crispy Chinese noodles are often served as an appetizer or side dish in Chinese restaurants, especially in Chinese-American cuisine. They are typically placed on top of soups, such as hot and sour soup or wonton soup, where they provide a delightful crunch that contrasts with the broths smooth texture. They are also commonly used as a topping for salads or as a snack, sometimes sprinkled with a little salt or sugar for added flavor. They pair well with any dish that could benefit from a crunchy texture.

Exactly like the crispy noodles you get at the restaurants! You must be careful not to cook them too long, these noodles brown very fast and must be watched continuously. The perfect addition to soups or salads!

Made these using my countertop deep fryer rather than a wok. Still worked wonderfully. The crispy noodles are my favorite addition to hot-and-sour soup!

Awesome ,so easy. I did them in a deep fryer method..in a sauce pan with oil. Dropped them in bunches . They would be a great with soup or put garlic or cinn/sugar for a crunchy snack.

Easier, less messy, safer and much less oil is using your air fryer to make these! On medium high with just a smidgeon of oil and watch them carefully as they cook fast! Take them out b/4 fully brown and drop on a paper plate w/ a couple of flattened coffee filters, salt to taste and they continue to brown up just a tad as they cool down.
