Grandma Gladys's Zucchini Soup Recipe
This hearty and nutritious soup is a perfect blend of ground turkey, turkey sausage, and a mix of fresh vegetables. The Italian seasoning and a sprinkle of Parmesan cheese enhance its flavor, making it a great dish for a family meal.
Ingredients
- 10 ounces ground turkey
- 3 turkey Italian sausages, casings removed
- 1 cup chopped green bell pepper
- cup chopped onion
- 4 stalks celery, thinly sliced
- 2 (28 ounce) cans stewed tomatoes
- 6 zucchini, cut into cubes
- 4 (10.75 ounce) cans low-sodium chicken broth
- 1 tablespoon Italian seasoning
- teaspoon sea salt
- teaspoon dried tarragon
- teaspoon garlic powder
- Ground black pepper to taste
- cup grated Parmesan cheese, or to taste
Directions
Step 1: In a large pot, cook and stir the ground turkey, turkey sausage, chopped green bell pepper, onion, and celery over medium-high heat. Continue cooking until the meat is no longer pink and the vegetables are tender, about 10 to 12 minutes.
Step 2: Stir in the stewed tomatoes, zucchini cubes, chicken broth, Italian seasoning, sea salt, dried tarragon, garlic powder, and black pepper. Bring the mixture to a boil.
Step 3: Once the soup reaches a boil, reduce the heat to low and let it simmer. Allow the flavors to combine and the vegetables to soften, about 1 hour.
Step 4: Ladle the soup into bowls and garnish with freshly grated Parmesan cheese before serving.
