Ingredients

  • 3 pounds ground beef
  • 1 cups chopped onion
  • 8 cups tomato juice
  • 4 (15 ounce) cans kidney beans
  • 4 (10.75 ounce) cans condensed tomato soup
  • 2 large potatoes, cubed
  • 3 teaspoons chili powder
  • 8 cups water
  • 1/8 teaspoon salt, or to taste

Directions

  1. In a large pot, combine the ground beef and chopped onions over medium heat. Cook and stir until the meat is browned and crumbly, approximately 5 minutes. Drain any excess fat.
  2. Add the tomato juice, kidney beans, condensed tomato soup, cubed potatoes, and chili powder to the pot. Stir in the water and salt, making sure all ingredients are well mixed.
  3. Bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 1 hour, or until the potatoes are tender and the soup has thickened to your desired consistency.
