- 3 pounds ground beef
- 1 cups chopped onion
- 8 cups tomato juice
- 4 (15 ounce) cans kidney beans
- 4 (10.75 ounce) cans condensed tomato soup
- 2 large potatoes, cubed
- 3 teaspoons chili powder
- 8 cups water
- 1/8 teaspoon salt, or to taste
Directions
- In a large pot, combine the ground beef and chopped onions over medium heat. Cook and stir until the meat is browned and crumbly, approximately 5 minutes. Drain any excess fat.
- Add the tomato juice, kidney beans, condensed tomato soup, cubed potatoes, and chili powder to the pot. Stir in the water and salt, making sure all ingredients are well mixed.
- Bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 1 hour, or until the potatoes are tender and the soup has thickened to your desired consistency.
