Slow Cooker Ground Chicken Chili Recipe

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound ground chicken
  • 2 tablespoons chili powder
  • 2 cloves garlic, minced
  • 1 teaspoons ground cumin
  • teaspoon red pepper flakes
  • 1 (29 ounce) can kidney beans, rinsed and drained
  • 2 (10 ounce) cans diced tomatoes with green chile peppers
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 medium onion, chopped
  • 1 medium jalapeno pepper, seeded and finely chopped (Optional)
  • 2 cups chicken broth
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 tablespoon sour cream, or to taste (Optional)
  • 1 tablespoon shredded Cheddar cheese, or to taste (Optional)
  • 1 tablespoon chopped green onions, or to taste (Optional)
  • 1 jalapeno pepper, sliced, or to taste (Optional)

Directions

Step 1: Heat vegetable oil over medium-high heat in a medium-sized pan. Cook and stir ground chicken in the hot skillet until browned and crumbly, about 5 to 7 minutes. Drain and discard any excess grease.

Step 2: In a small bowl, combine chili powder, garlic, cumin, and red pepper flakes. Stir the mixture into the cooked chicken to coat evenly.

Step 3: Transfer the seasoned chicken to a slow cooker. Add the kidney beans, diced tomatoes with green chile peppers, black beans, onion, and chopped jalapeno (if using). Pour the chicken broth over the mixture and stir to combine all the ingredients.

Step 4: Cover the slow cooker and cook on High for 4 hours or on Low for about 8 hours, until the chili has thickened and flavors have melded together.

Step 5: During the last 30 minutes of cooking, stir in the drained corn kernels to heat through.

Step 6: Once the chili is ready, spoon it into bowls and top with your choice of optional garnishes: sour cream, shredded Cheddar cheese, chopped green onions, and sliced jalapeno.

Recipe Tips

  • This recipe can also be made with 1 pound of boneless chicken breasts. Simply add all ingredients, including spices, to the slow cooker, and submerge the raw chicken breasts under the liquid. Cook on Low for 7 hours, shred the chicken, and return it to the slow cooker for an additional hour of cooking.
  • For a spicier chili, increase the amount of red pepper flakes to 1 teaspoon.
