Healthy Creamy Chicken and Pasta Recipe

Ingredients

  • 1 (8 ounce) package whole wheat penne pasta
  • 2 tablespoons olive oil
  • 3 tablespoons minced garlic
  • 1 pound skinless, boneless chicken breasts, cubed
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 (10.5 ounce) can fat-free cream of mushroom soup
  • cup water, or as needed
  • 1 pinch garlic salt, or to taste
  • 1 pinch red pepper flakes, or to taste

Directions

  1. Fill a large pot with lightly salted water and bring to a boil. Stir in the penne and return to a boil. Cook the pasta uncovered, stirring occasionally, until al dente, about 11 minutes. Drain the pasta.
  2. In a large skillet, heat olive oil and saut minced garlic over high heat for about 2 minutes, or until fragrant and slightly golden brown.
  3. Add the cubed chicken and sliced mushrooms to the skillet. Stir to coat the chicken and mushrooms with the garlic and olive oil. Cook the chicken until it's no longer pink in the center and the juices run clear, about 6-8 minutes.
  4. Stir in the cream of mushroom soup. Gradually add cup of water, one tablespoon at a time, stirring until the sauce becomes light and creamy.
  5. Reduce the heat to medium-low and gently fold the cooked pasta into the chicken and sauce mixture, ensuring everything is evenly coated.
  6. Season with garlic salt and red pepper flakes to taste. Remove from heat and serve immediately.
