Slow Cooker Spicy Black-Eyed Peas Recipe
Ingredients

- 6 cups water
- 1 cube chicken bouillon
- 1 pound dried black-eyed peas, sorted and rinsed
- 8 ounces diced ham
- 4 slices bacon, chopped
- 1 onion, diced
- 1 red bell pepper, stemmed, seeded, and diced
- 1 jalapeo chile, seeded and minced
- 2 cloves garlic, diced
- 1 teaspoons cumin
- 1 teaspoon ground black pepper
- teaspoon cayenne pepper
- Salt, to taste
Directions
Step 1: Begin by gathering all your ingredients. Ensure you have everything ready for the next steps.
Step 2: Pour 6 cups of water into your slow cooker. Add the chicken bouillon cube and stir until fully dissolved.
Step 3: To the slow cooker, add the black-eyed peas, diced ham, chopped bacon, diced onion, red bell pepper, minced jalapeo, and garlic. Stir to combine.
Step 4: Season the mixture with cumin, black pepper, cayenne pepper, and salt. Stir again to ensure the spices are evenly distributed.
Step 5: Cover the slow cooker with the lid and set it to cook on Low for 6 to 8 hours, or until the beans are tender and fully cooked.

I absolutely loved this meal. At the start of the year I found out I have extremely high cholesterol and came seeking healthy foods. I switched out the four strips of bacon for a couple of extra slices of lean ham (same weight but with the big clobs of fat) otherwise I left the recipe alone. It deserves to be cooked slowly over 6-8 hours rather than being cooked on high. Comments on the quantity of fluid seem overblown, probably because soaking the quantity of beans required for this recipe actually takes more than the a cup of water ... if you do pre-soak the beans you'll need to remove quite a bit more, however over 6-8 hours this isn't an issue. I'm not sure why anybody would pre-soak these beans in water, when you can have them soften up nicely in the flavorful slow cooker. I divide this into about six meals and throw it over fresh greens. Awesome.

I made this a few days ago and I love it. I made it exactly as specified here except for using 3 smoked pork neckbones instead of bacon and ham. The recipe also said to add salt to taste. I used 1 teaspoon and it was perfect. I also used 1 level teaspoon of Knorr chicken bouillon granules (powder) instead of a bouillon cube. I served this over flavored rice. I rinsed 1 1/2 cup of rice, heated a teaspoon of bacon grease in a cast iron skillet and heated the uncooked rice over medium-high heat until it was a light shade of brown. Then I cooked the rice in 3 cups of water flavored by 3 level teaspoons of Vegeta All-Purpose Seasoning. For those of you who've never heard of Vegeta, it's a powder made of dehydrated vegetables. It uses the same vegetables that are typically used in vegetable bouillon plus a few more. I use it to flavor rice or to make vegetable broth. It's a dirt-cheap alternative to Better Than Bouillon and available on Amazon.

Was reluctant to cook the beans without soaking, but based on the reviews took a chance. It was great. Used a smoked turkey wing instead of the ham and bacon. Put it in the crockpot with water to cover & cooked on high for a couple of hours. Makes a wonderful broth and the meat comes off the bone. Added the rest of the ingredients, but no bouillon as you have the broth already, & cooked on low according to directions. Added a touch of sugar near the end - calms the spicy a bit. Will do this again. One more tip - used a crockpot liner for the first time, makes cleanup a breeze.

This is a great basic recipe, and you can do it on the stovetop or even in the pressure cooker instead of the slow cooker. I prefer to soak my peas all day and then simmer them on the stovetop, which only takes about 90 minutes if I've soaked them. We don't like bacon, so I put in smoked sausage near the end. I also add a couple of bay leaves during cooking. Another great add-in is green beans. It gives you the sensation of black-eyed peas with snaps. I make these on a regular basis. Made a vegetarian version of this and it was delicious. Substituted bacon with MorningStar Farms Veggie Bacon Strips, ham with Field Roast SPICY MEXICAN CHIPOTLE PLANT-BASED SAUSAGE, and chicken broth with Vegetarian Better Than Bouillon No Chicken Base. Everything else remained the same.

I made this in my Instantpot. I used dry beans and I did not soak them overnight (the Instantpot is great for that). I used thyme and paprika as seasonings instead of cumin because that is what I had on hand. I also added lots of spinach. A side note, the ham was salty so be aware of not over salting.

Hubby loved it!! I made a few changes-added sliced carrots and celery and a can of diced tomatoes. I didn’t want it too spicy, so I omitted the cayenne, and used 1/2 tbsp of tony chachere’s seasoning. Didn’t pre-soak the beans. Didn’t have enough time to use the slow cooker, so put everything in the instant pot for 15 min at high pressure, then natural release. Delicious with corn muffins! Will definitely make it my standard New Years dinner!

I use this recipe ALL THE TIME! It's great and all of my coworkers (pre-COVID-19) loved it. I make a couple of slight changes to the recipe. I use ham hocks (2 or 3 depending on the size that will fit in the crockpot), no bacon. I also find that cooking it on low for 9 hours REALLY allows for all the flavor of the ham hocks to absorb into the beans and broth.

Yes. Didn’t have Jalapeños so used a teaspoon of Tony’s I had a ham bone with a good bit of ham I first parboiled and used this broth and all the ham instead of chicken bouillon also added 1/2 stick butter. Wonderful flavor and didn’t need to presoak peas

Made the following changes - [ ] No jalapeño peppers used - [ ] Use 48 oz vegetable broth low salt - [ ] 8 oz children broth - [ ] Chicken bouillon cube - [ ] Add Goya ham seasoning packet - [ ] Add honey - [ ] Add smoked paprika - [ ] Add Tajin - [ ] Use salt pork in replace of ham - [ ] Add extra bacon - [ ] Next time add a ham hock Used other spices as listed Slow cook 8 hours Made for New Years Day dinner along with pork and sauerkraut. Great addition to the menu. Everyone enjoyed the beans. It was delicious!
