Cranberry Meatballs Recipe

Cook Time: 90 minutes

Ingredients:

  • 2 pounds lean ground beef
  • 1 cup bread crumbs
  • cup ketchup
  • 2 large eggs, beaten
  • 2 tablespoons soy sauce
  • teaspoon ground black pepper
  • teaspoon garlic powder
  • 1 (16 ounce) can jellied cranberry sauce
  • 1 (18 ounce) bottle BBQ sauce
  • 2 tablespoons brown sugar, or to taste
  • 1 tablespoon lemon juice

Directions:

  1. Preheat the oven to 350F (175C).
  2. In a large bowl, combine ground beef, bread crumbs, ketchup, eggs, soy sauce, black pepper, and garlic powder. Mix well until everything is fully incorporated.
  3. Shape the mixture into small meatballs and arrange them on a nonstick baking sheet.
  4. Bake in the preheated oven for about 30 minutes, turning the meatballs halfway through until they are browned and cooked through.
  5. While the meatballs are baking, prepare the sauce. In a large saucepan, combine the cranberry sauce, BBQ sauce, brown sugar, and lemon juice. Stir and heat over low heat until the mixture is smooth and well combined.
  6. Once the meatballs are cooked, add them to the saucepan with the sauce. Let them simmer for 1 hour, allowing the flavors to meld.
  7. Serve the meatballs warm with the sauce.
