Cranberry Meatballs Recipe
Cook Time: 90 minutes
Ingredients:
- 2 pounds lean ground beef
- 1 cup bread crumbs
- cup ketchup
- 2 large eggs, beaten
- 2 tablespoons soy sauce
- teaspoon ground black pepper
- teaspoon garlic powder
- 1 (16 ounce) can jellied cranberry sauce
- 1 (18 ounce) bottle BBQ sauce
- 2 tablespoons brown sugar, or to taste
- 1 tablespoon lemon juice
Directions:
- Preheat the oven to 350F (175C).
- In a large bowl, combine ground beef, bread crumbs, ketchup, eggs, soy sauce, black pepper, and garlic powder. Mix well until everything is fully incorporated.
- Shape the mixture into small meatballs and arrange them on a nonstick baking sheet.
- Bake in the preheated oven for about 30 minutes, turning the meatballs halfway through until they are browned and cooked through.
- While the meatballs are baking, prepare the sauce. In a large saucepan, combine the cranberry sauce, BBQ sauce, brown sugar, and lemon juice. Stir and heat over low heat until the mixture is smooth and well combined.
- Once the meatballs are cooked, add them to the saucepan with the sauce. Let them simmer for 1 hour, allowing the flavors to meld.
- Serve the meatballs warm with the sauce.
