Ground Beef Enchiladas Recipe
Ingredients

- 1 pounds lean ground beef
- 1 bunch green onions, finely chopped
- 1 diced fresh jalapeno pepper, or to taste
- cup water
- 1 (1.25 ounce) package taco seasoning mix
- 1 cup plain yogurt
- 1 (10.75 ounce) can condensed cream of chicken soup
- 2 cups shredded mozzarella cheese
- 6 (6 inch) corn tortillas
Directions
Step 1: Preheat your oven to 350F (175C).
Step 2: In a large skillet over medium heat, cook the ground beef along with the chopped green onions and diced jalapeno pepper. Stir occasionally until the beef is evenly browned.
Step 3: Add the water and taco seasoning mix to the skillet. Stir to combine, and simmer until the water has evaporated, leaving behind a thick, flavorful meat mixture.
Step 4: In a medium bowl, mix together the yogurt, condensed cream of chicken soup, and shredded mozzarella cheese until well combined.
Step 5: Take each tortilla and divide the meat mixture evenly between them. Spoon a couple of tablespoons of the cheese mixture over the meat and roll up the tortillas to form wraps.
Step 6: Place the rolled tortillas in a 7x11 inch baking dish, arranging them side by side. Repeat this process for all six tortillas.
Step 7: Spoon any remaining cheese mixture over the top of the tortillas in the baking dish, ensuring an even layer of cheese.
Step 8: Bake in the preheated oven for 20 to 30 minutes, or until the cheese is melted and bubbly, and the tortillas are lightly golden on top.
