Spinach Tomato Tortellini Recipe

Cook Time: 15 minutes

Ingredients:

  • 1 (16 ounce) package cheese tortellini
  • 1 (14.5 ounce) can diced tomatoes with garlic and onion
  • 1 cup chopped fresh spinach
  • 1 teaspoons dried basil
  • 1 teaspoon minced garlic
  • teaspoon salt
  • teaspoon pepper
  • cup milk
  • cup heavy cream
  • 2 tablespoons all-purpose flour
  • cup grated Parmesan cheese

Directions:

  1. Fill a large pot with lightly salted water and bring it to a rolling boil. Once boiling, add the tortellini and cook until tender, about 10 minutes. Drain, but do not rinse.
  2. While the tortellini is cooking, heat a large saucepan over medium heat. Add the diced tomatoes, spinach, basil, garlic, salt, and pepper. Stir occasionally until the mixture starts to bubble.
  3. In a medium bowl, whisk together the milk, cream, and flour until smooth. Gradually add this mixture to the saucepan, along with the grated Parmesan cheese. Stir to combine.
  4. Let the sauce cook for about 3 to 5 minutes, until heated through. Reduce the heat to low and simmer for an additional 2 minutes, allowing the sauce to thicken.
  5. Gently add the drained tortellini to the saucepan, stirring to coat the pasta with the creamy sauce. Serve warm and enjoy!

Oh my, but this was good. I did make a few changes (of course). My husband expects MEAT on his dinner plate, so I squeezed the innards out of a couple of large-ish hot Italian sausages and browned it up in a tiny bit of EVOO. Then I added some sliced fresh crimini mushrooms that needed to be used up. My canned tomatoes were the plain, common garden variety, so I threw in some chopped onion and minced garlic. Deglazed the pan with some white wine and used more spinach than called for. An entire bunch, actually. The DH has placed a moritorium on me buying anything new to stuff into my over-burdened freezer, so I had to use a bag of frozen three-cheese ravioli instead of the tortellini. But hey, it's the same thing, only flat, right? Also I didn't have any whole milk, so I had to use non-fat, but it didn't seem to hurt anything. This was fantastic! The sausage and mushrooms gave the sauce a nice beigey color. I'm sure it would have been prettier with the tortellini, but I had to make do. Delicious! Thanks for the recipe!

This was a great dish with a little tweaking. First I minced a medium yellow onion and sautéed for about 2 minutes, then added 3 cloves of minced garlic and sautéed about 1 minute more. I then added all of the ingredients from the second step and cooked for a few minutes while bubbling. I turned down the heat and added about 6 cups of fresh spinach. I let that wilt about half way, then added baby Bella mushrooms. I mixed 1/4 cup of the milk with 1 tablespoon of cornstarch, then whisked all of the milk mixture together and added it to the pan. I let that get to a boil and then turned it down to cook for about 5 minutes (stirring occasionally). I added the cooked tortellini last, and tossed to coat. I ended up with a thick, creamy, wonderful dinner!! I’m still going to add more garlic next time though.

So my husband said if he could give this dish 6 stars he would! Made mine with meats which my husband prefers. I used chicken raviolis bice cheese tortellini. And started with sauteeing one chicken/garlic keilbasa, took out of the pan, then sauteed pancetta and took out of pan, leaving the oil. Then sauteed one sweet onion chopped. Added the ingredients per recipe along with FRESH chopped basil, for sauce. Then added in 2T lemon juice to sauce. Once sauce thickened I stirred in cooked keilbasa and pancetta and placed on low heat for raviolis to boil on side. Once all items cooked through, spread raviolis in a rectangular dish and added all sauce to top and folded in. Garnished with freshly chopped basil. We will have this as a staple dish now-family loved it!

I make this a couple times a month. It’s so easy. Dinner in less than 30 minutes. Recipe is forgiving and adaptable. I double ithe tortellini and add3 cans od fire roasted tomatoes and a large can of marzano whole tomatoes. I sauté 4-5 cloves of garlic and do a whole bag of spinach. I also use an egg instead of flour. Salt pepper basil and oregano.. Ive used the sauce with ready made meatballs on spaghetti. Everyone loves it.

It was delicious! I added an extra tablespoon of flour just to thicken it up a bit more, and some sausage though it would be fine without it. I recommend waiting to cook the pasta so it is nice and warm and not stuck together if you do it first thing.

Super easy. Super tasty. I couldn't find any canned tomatoes with onion in it, so I simmered my own in olive oil in the sauce pan before adding the other ingredients. Other than that, I made as directed. As a side dish/topper for the pasta, I added some seared zucchini slices seasoned with red pepper flakes and shredded parmesan.

This was solid! I added more tortellini because I knew I was feeding hungry people, so I added 3T flour, and one cup of both the milk and heavy cream. Also made sausage crumbles and set them aside to add at the end. It was amazing! Thank you!

I used my own grown tomatoes, fresh basil, and white onion for this dish. I did cook some of the spinach in with the tomato saute with a few dashes of cayenne for a nice seasoned KICK, then the rest of the spinach before I added the cooked chicken stuffed tortellini. With the 2 tablespoons of flour in the milk mixture (1.5 C of 1/2 & 1/2), came out PERFECT, hubby says like an at a nice Italian restaurant, only BETTER!

Wonderful flavor! I took reviewer advice & sautéed some chopped garlic in OO first. I subbed the canned tomatoes for those with basil & oregano, a fave of mine. I used half & half rather than the milk and cream, and 1 T cornstarch instead of 2 T flour, another reviewer tip. Absolutely loved it, and was impressed at how quick & easy it was. Next time, I’m adding shrimp. Thanks for this great ‘keeper’!

I was so excited to try this recipe. I went to my local Aldi’s. They had a 9 oz package of cheese tortellini for $1.99. (For $2.20 more they had a package of chicken and cheese tortellini.)Their bag of fresh spinach was $1.19. They had a can of fire roasted diced tomatoes for .92 cents. Their heavy whipping cream was$1.55. So, for under $6, I got the main ingredients. I was extremely happy with that price. I was being cheap so I stuck with the one package. For those who love cream sauces as I do, I think using heavy cream is the way to go. I did not have basil so I used Italian seasoning. I forgot to add the garlic in my rush, and I really love garlic, like I said I was excited to try and hungry, so I probably had this cooked and gobbled up with in a half hour, lol. I would probably use two packages of pasta for next time. I would also like to try chicken and wine next time as well. This was sooo quick and affordable to make. I will most definitely be making again!

I used tortelloni, a whole package of baby spinach (didn't bother to chop!), and fresh basil instead of dried. My super picky husband--who I fully expected not to like this--loved it! It is definitely getting added to our regular rotation. Seems like it would be super easy to add some Italian sausage as others have suggested if you wanted this to be a more hearty meal, but we do try to have a meatless dinner once a week.

Loved how easy it was to make but felt like it was missing something. My family thought it was just "OK". I will likely try it again but try sundried tomatoes instead of the canned diced ones, add some cooked chicken to it to make it feel more substantial as a meal and/or add a little crushed red pepper to give it some pizzaz.

This is an excellent basic recipe. I made a few subtle changes. I used a whole 6oz bag of spinach, sautéed some onion and garlic first, used half and half instead of the milk and cream, and a shake of red pepper flakes at the end. It still needs a bit more flavor but I’ll experiment more with that. It’s definitely a recipe that I will make again.
