Irish Tacos Recipe

Ingredients

  • 2 cups plain yogurt
  • cup mayonnaise
  • 1 lime, juiced
  • 2 tablespoons chopped fresh cilantro
  • 1 pinch cayenne pepper, or to taste
  • Salt to taste
  • 1 cups shredded corned beef
  • 8 (10 inch) flour tortillas
  • 1 pound prepared coleslaw

Directions

Step 1: In a bowl, combine yogurt, mayonnaise, lime juice, chopped cilantro, cayenne pepper, and salt. Stir until smooth and set aside.

Step 2: Place the shredded corned beef in a saucepan over medium-low heat. Stir occasionally until the beef is heated through, ensuring it doesn't overcook.

Step 3: While the corned beef is warming, heat a tortilla in a heavy skillet over medium heat. Cook for about 30 seconds on each side, or until it starts to develop light brown spots. Repeat with the remaining tortillas.

Step 4: To assemble the tacos, place about 2 tablespoons of coleslaw in the center of each tortilla. Top with approximately 3 tablespoons of the warm corned beef.

Step 5: Drizzle 2 tablespoons of the prepared yogurt sauce over the corned beef. Roll up the tortilla to enclose the filling and serve immediately.
