Stuffed Zucchini with Chickpeas and Mushrooms

This recipe yields 8 servings and combines zucchini, mushrooms, and chickpeas in a savory, hearty filling that's perfect for a light meal. A quick and easy dish to prepare, perfect for a healthy lunch or dinner.

Ingredients

  • 4 zucchini, halved
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • (8 ounce) package button mushrooms, sliced
  • 1 teaspoon ground coriander
  • 1 teaspoons ground cumin (or to taste)
  • 1 (15.5 ounce) can chickpeas, rinsed and drained
  • lemon, juiced
  • 2 tablespoons chopped fresh parsley
  • Sea salt to taste
  • Ground black pepper to taste

Directions

  1. Preheat the oven to 350F (175C). Grease a shallow baking dish with olive oil or non-stick spray.
  2. Carefully scoop out the flesh of the zucchini halves, leaving the shells intact. Chop the zucchini flesh and set it aside.
  3. Place the hollowed-out zucchini shells in the prepared baking dish, ensuring they are evenly spaced.
  4. Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the chopped onion and saut for about 5 minutes, or until softened and translucent.
  5. Add the crushed garlic to the pan and saut for an additional 2 minutes, until fragrant.
  6. Stir in the chopped zucchini flesh and sliced mushrooms, cooking for about 5 minutes until the vegetables begin to soften.
  7. Season the mixture with ground coriander, cumin, salt, and pepper. Stir in the chickpeas, lemon juice, and fresh parsley, mixing everything together until well combined.
  8. Spoon the vegetable and chickpea mixture into the hollowed zucchini shells, pressing gently to pack the filling inside.
  9. Transfer the stuffed zucchini to the preheated oven and bake for 30 to 40 minutes, or until the zucchini shells are tender and the filling is hot.
  10. Remove from the oven and let it cool for a few minutes before serving. Garnish with additional fresh parsley, if desired.
