Vera Cruz Tomatoes Recipe
Ingredients

- 4 firm ripe tomatoes
- 3 slices bacon
- cup chopped onion
- 8 ounces fresh spinach, stems snipped
- cup sour cream
- teaspoon hot pepper sauce
- Salt to taste
- cup shredded Mexican cheese blend
Directions
Step 1: Preheat an oven to 375F (190C). Grease an 8x8 inch baking dish.
Step 2: Cut the tops off the tomatoes and remove the seeds and membranes. Place the tomato shells upside down on paper towels to drain while preparing the filling.
Step 3: In a large, deep skillet, cook the bacon over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Once done, drain the bacon on a paper towel-lined plate and reserve the bacon drippings. Crumble the bacon and set it aside.
Step 4: Return 2 tablespoons of the reserved bacon drippings to the skillet. Add the chopped onion and cook until tender, about 5 minutes.
Step 5: Stir in the spinach and cook, stirring occasionally, until wilted, about 2 minutes. Remove the skillet from the heat.
Step 6: Stir in the sour cream, crumbled bacon, and hot pepper sauce. Mix well to combine.
Step 7: Sprinkle the tomato shells with salt and fill each evenly with the bacon and spinach mixture. Place the filled tomatoes in the prepared baking dish.
Step 8: Bake in the preheated oven for 20 to 25 minutes, or until the tomatoes are heated through.
Step 9: Remove from the oven and sprinkle the shredded Mexican cheese on top of each tomato. Return the dish to the oven and bake for an additional 5 minutes, or until the cheese is melted.
