Bucatini All'Amatriciana Recipe
Ingredients
- 5 ounces bucatini pasta
- cup extra-virgin olive oil
- 3 crushed garlic cloves
- 1 ounces guanciale (cured pork cheek), sliced
- cup sliced red onion
- 1 pinch red pepper flakes
- (8 ounce) can crushed San Marzano tomatoes
- Salt and ground black pepper to taste
- 1 ounce freshly grated Pecorino Romano cheese
Directions
- Fill a large pot with lightly salted water and bring it to a rolling boil. Add the bucatini pasta and stir. Return to a boil and cook, uncovered, for about 11 minutes, stirring occasionally, until the pasta is tender. Once done, drain the pasta and set aside.
- While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the crushed garlic cloves and cook until they turn golden brown, about 1 minute. Remove the garlic with a slotted spoon and discard it.
- In the same skillet, add the sliced guanciale. Cook and stir for about 4 minutes, or until it becomes crisp and golden brown.
- Add the sliced red onion and red pepper flakes to the skillet. Cook, stirring occasionally, for about 3 minutes, until the onion becomes translucent.
- Stir in the crushed San Marzano tomatoes, followed by salt and black pepper to taste. Let the tomato sauce simmer for about 10 minutes, allowing the flavors to meld together.
- Once the sauce is ready, add the cooked bucatini pasta and freshly grated Pecorino Romano cheese. Toss everything together until the pasta is evenly coated with the sauce.
- Serve immediately and enjoy your delicious bucatini with guanciale and tomato sauce!

There seems to be an error in this recipe – it should call for a 28oz can of crushed tomatoes, not an 8oz can. The smallest cans usually come in 14oz size, and using only half of an 8oz can would be equivalent to about 2 tablespoons. The dish turned out just okay; increasing the amount of meat would have improved it, along with adding more seasoning, especially herbs. Additionally, using 1/4 cup of oil was excessive and didn't contribute much to the flavor – 2 tablespoons would have been sufficient.

I highly recommend making two small adjustments to this dish that will take it to the next level of deliciousness. 1. Instead of discarding the garlic, finely mince it in a mini food processor and mix it into the tomatoes. 2. About 2-3 minutes before the sauce is done, remove the guanciale slices, chop them in the mini food processor, and then reintroduce them to the sauce. The result is absolutely fantastic. Hats off to the chef!

Simple and tasty! I opted for pancetta and decided to double the recipe. However, I used approximately 1/3 cup of olive oil. I will definitely be making this again.

I couldn't locate guanciale, so I ended up using thick sliced bacon as a substitute. Surprisingly, the dish turned out to be absolutely delicious and surprisingly easy to make.

I was amazed by this recipe! Just like many others, I couldn't find guanciale, so I used pancetta as a substitute. I did drain off some of the fat before proceeding with the cooking. My husband and I absolutely loved this dish! We paired it with a basic side salad and some garlic bread. The flavors are exceptional and really stand out! This recipe is a winner and will undoubtedly become a regular meal in our home. A big thank you to Chef Carlo Apolloni for sharing this fantastic dish!
