Ingredients

  • 8 chicken thighs
  • 4 large ripe tomatoes, quartered
  • 8 cloves garlic, finely minced
  • 4 teaspoons fresh ginger, minced
  • 1 teaspoon chili powder
  • 1 pinch ground turmeric
  • 1 teaspoon salt
  • teaspoon coconut oil (optional, for finishing)

Directions

  1. Place the chicken thighs, quartered tomatoes, minced garlic, ginger, chili powder, turmeric, and salt into a large, heavy-bottomed pot over high heat. Stir frequently until the chicken starts to brown evenly on all sides.
  2. Reduce the heat to medium-low. Cover and braise the chicken gently until tender, approximately 45 minutes. Ensure the internal temperature near the bone reaches at least 165F (74C) with an instant-read thermometer.
  3. Optional: Drizzle with coconut oil just before serving to add a subtle richness and aroma.
