Tomato Chicken Recipe

Ingredients

- 8 chicken thighs
- 4 large ripe tomatoes, quartered
- 8 cloves garlic, finely minced
- 4 teaspoons fresh ginger, minced
- 1 teaspoon chili powder
- 1 pinch ground turmeric
- 1 teaspoon salt
- teaspoon coconut oil (optional, for finishing)
Directions
- Place the chicken thighs, quartered tomatoes, minced garlic, ginger, chili powder, turmeric, and salt into a large, heavy-bottomed pot over high heat. Stir frequently until the chicken starts to brown evenly on all sides.
- Reduce the heat to medium-low. Cover and braise the chicken gently until tender, approximately 45 minutes. Ensure the internal temperature near the bone reaches at least 165F (74C) with an instant-read thermometer.
- Optional: Drizzle with coconut oil just before serving to add a subtle richness and aroma.
