Flatbread Pizza with Grilled Peaches Recipe

Ingredients

  • Cooking spray
  • 8 ounces pizza dough, at room temperature
  • 2 (4 ounce) links Italian sausage, casings removed
  • cup ricotta cheese
  • 2 cloves garlic, thinly sliced
  • Kosher salt and ground black pepper to taste
  • 2 medium peaches, pitted and sliced into thin wedges
  • 1 cups arugula
  • cup microgreens

Directions

  1. Preheat the oven to 450F (230C). Lightly spray a large baking sheet with cooking spray.
  2. Stretch the pizza dough into a rough rectangular shape, approximately 8 inches long. Place it on the prepared baking sheet. Bake in the preheated oven until the dough is mostly cooked through and starting to brown, about 10 to 14 minutes.
  3. While the dough is baking, preheat an outdoor grill for high heat and lightly oil the grate. At the same time, heat a medium skillet over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until browned and crumbly, about 10 minutes. Remove from the skillet and transfer to a paper towel-lined plate.
  4. While the sausage is cooking, place peach slices in a single layer on the preheated grill. Grill for 8 minutes, flipping once halfway through. Remove from the grill and set aside.
  5. Once the dough is done, remove it from the oven. Spread the ricotta cheese evenly over the top. Scatter the garlic slices over the ricotta and season with salt and pepper. Lay the cooked sausage on top.
  6. Return the pizza to the oven and bake for an additional 5 minutes, or until the toppings are heated through and the crust is fully cooked.
  7. Remove the flatbread from the oven and top with the grilled peaches, arugula, and microgreens.
