Ingredients
- 1 tablespoon olive oil
- 1 shallot, diced
- 1 (10 ounce) bag baby spinach leaves
- Kosher salt and freshly ground pepper to taste
Directions
Step 1: Heat the olive oil in a large skillet over medium heat.
Step 2: Add the diced shallots to the skillet and cook for about 5 minutes, or until they become transparent.
Step 3: Toss in the spinach leaves, sprinkle with salt and pepper, and stir well.
Step 4: Cook and stir the spinach for 3 to 5 minutes, until the leaves are wilted and reduced in size.
