Disney's Ratatouille Recipe

Ingredients

  • 1 (6 ounce) can tomato paste
  • onion, chopped
  • cup minced garlic
  • cup water
  • 4 tablespoons olive oil, divided
  • Salt and ground black pepper to taste
  • 1 small eggplant, trimmed and very thinly sliced
  • 1 zucchini, trimmed and very thinly sliced
  • 1 yellow squash, trimmed and very thinly sliced
  • 1 red bell pepper, cored and very thinly sliced
  • 1 yellow bell pepper, cored and very thinly sliced
  • 1 teaspoon fresh thyme leaves, or to taste
  • 3 tablespoons mascarpone cheese (optional)

Directions

Step 1: Preheat the oven to 375F (190C).

Step 2: Spread the tomato paste evenly on the bottom of a 10-inch square baking dish.

Step 3: Sprinkle the chopped onion and minced garlic over the tomato paste. Stir in the water and 1 tablespoon of olive oil, mixing thoroughly until well combined. Season with salt and black pepper to taste.

Step 4: Begin arranging the sliced vegetables in the baking dish, alternating between eggplant, zucchini, yellow squash, red bell pepper, and yellow bell pepper. Start from the outer edge and work concentrically towards the center. Overlap the slices slightly to create a colorful display.

Step 5: Drizzle the remaining 3 tablespoons of olive oil over the vegetables. Season with salt and pepper. Sprinkle the fresh thyme leaves evenly over the top.

Step 6: Cover the vegetables with a piece of parchment paper, cutting it to fit the dish.

Step 7: Place the dish in the preheated oven and bake for about 45 minutes, or until the vegetables are tender and roasted.

Step 8: If desired, serve the dish with dollops of mascarpone cheese on top for extra creaminess.

Cooks Note

This vegetable medley is delicious served as-is with crusty bread, or over rice, couscous, or pasta for a complete vegetarian meal.
