Cauliflower Pizza Crust

This cauliflower pizza crust is a delicious, low-carb alternative to traditional pizza dough. It's simple to make and perfect for a healthier pizza night.

Ingredients:

  • 1 teaspoon extra-virgin olive oil
  • 1 pound riced cauliflower
  • 2 teaspoons kosher salt, divided
  • 2 large eggs
  • cup shredded mozzarella cheese
  • cup almond flour
  • 1 tablespoon chopped fresh parsley
  • teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon granulated garlic

Directions:

Step 1: Preheat your oven to 450F (230C). Line a 9x13-inch sheet pan with parchment paper and lightly coat it with olive oil. Set the pan aside.

Step 2: Place the riced cauliflower into a food processor and pulse until it reaches a fine, flour-like consistency.

Step 3: In a bowl, toss the cauliflower with 1 teaspoon of kosher salt. Wrap the mixture in a kitchen towel and wring out as much excess moisture as possible.

Step 4: Transfer the cauliflower to a large mixing bowl. Add in the eggs, mozzarella cheese, almond flour, chopped parsley, dried oregano, crushed red pepper flakes, granulated garlic, and the remaining 1 teaspoons of kosher salt. Mix until everything is well combined. The mixture should hold together when pressed in your hands.

Step 5: Transfer the cauliflower mixture to the prepared pan. Press it evenly and firmly into the pan. Use a rubber spatula to divide the crust horizontally in the middle, creating a -inch gap between the two sections.

Step 6: Bake the crusts in the preheated oven for 15 to 20 minutes, or until they are golden brown around the edges and firm to the touch.

Step 7: Remove the crusts from the oven. Carefully lift them using the parchment paper and flip them over onto the pan. Discard the parchment paper.

Step 8: Return the crusts to the oven and bake for another 5 minutes, or until the bottoms begin to brown.

Step 9: Remove the crusts from the oven. They are now ready to be used as a base for your favorite pizza toppings!

Margherita Pizza with Cauliflower Crust:

Spread 3 tablespoons of tomato sauce over each crust. Add 2 tablespoons of shredded mozzarella cheese, two slices of fresh mozzarella, a pinch of dried oregano, and a sprinkle of red pepper flakes. Bake in a preheated 450F (230C) oven for 6 to 8 minutes, or until the cheese is melted and just starting to brown. Garnish with fresh basil, slice, and serve immediately.
