Beer Can Chicken Recipe

Ingredients:

  • 1 whole chicken (2 to 3 pounds)
  • 1 can (12 fluid ounces) of beer
  • 5 tablespoons poultry seasoning
  • 4 dashes of liquid smoke flavoring
  • 4 bay leaves
  • 1 long metal skewer

Directions:

Step 1: Rinse and dry the chicken thoroughly. Remove any excess fat but leave the skin intact. Gently lift the skin from the breast and thigh areas, and carefully slide the bay leaves under the skin.

Step 2: Coat the chicken evenly with the poultry seasoning, ensuring it covers all sides.

Step 3: Open the can of beer and drink half of it. Pour the liquid smoke into the remaining beer inside the can.

Step 4: Position the beer can so that the tab is facing upward. Insert the can into the bottom of the chicken until the can reaches the bottom of the bird.

Step 5: Use the metal skewer to secure the chicken in place. Insert the skewer through the wing, ribs, and the beer can tab, extending it out the opposite side. This step helps prevent the can from falling out during cooking.

Step 6: Preheat the grill by lighting the coals. Once lit, spread the coals evenly to form a ring around the outer edge of the grill.

Step 7: Place the chicken upright in the center of the grill, balancing on the beer can. Close the grill lid and cook for approximately 2 hours.

Step 8: Check the internal temperature of the chicken with a meat thermometer. It should read at least 165F (74C) when inserted into the center of the meat.

Step 9: Carefully remove the chicken from the grill, ensuring the beer can remains upright to prevent spillage. Take out the skewer and beer can, and allow the chicken to rest for 15 minutes before cutting into it.
