Best Ever Sausage with Peppers, Onions, and Beer! Recipe

Ingredients

  • 3 tablespoons olive oil
  • 3 pounds Italian sausage links
  • 3 red bell peppers, sliced
  • 2 green bell peppers, sliced
  • 2 large red onions, sliced
  • 3 cloves garlic, chopped
  • 2 (12 fluid ounce) bottles beer
  • 1 (6 ounce) can tomato paste
  • 3 tablespoons chopped fresh oregano
  • 3 tablespoons chopped fresh cilantro
  • 2 tablespoons hot sauce
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large, heavy skillet over medium-high heat.
  2. Cook the sausage links, turning occasionally, until browned on all sides. Remove the sausages from the skillet and set them aside.
  3. Pour in one bottle of beer to deglaze the pan, making sure to scrape up any browned bits from the bottom of the skillet.
  4. Add the sliced red and green bell peppers, red onions, and chopped garlic to the skillet.
  5. Pour in the remaining bottle of beer along with the tomato paste. Stir to combine.
  6. Season with chopped oregano, chopped cilantro, hot sauce, salt, and pepper. Stir well to incorporate the spices.
  7. Cover the skillet and let it simmer, allowing the onions and peppers to soften and become tender.
  8. Slice the browned sausages into bite-sized pieces and add them back into the skillet.
  9. Cover again and continue to simmer until the sausages are fully cooked through.
