Best Ever Sausage with Peppers, Onions, and Beer! Recipe

Ingredients
- 3 tablespoons olive oil
- 3 pounds Italian sausage links
- 3 red bell peppers, sliced
- 2 green bell peppers, sliced
- 2 large red onions, sliced
- 3 cloves garlic, chopped
- 2 (12 fluid ounce) bottles beer
- 1 (6 ounce) can tomato paste
- 3 tablespoons chopped fresh oregano
- 3 tablespoons chopped fresh cilantro
- 2 tablespoons hot sauce
- Salt and pepper to taste
Directions
- Heat the olive oil in a large, heavy skillet over medium-high heat.
- Cook the sausage links, turning occasionally, until browned on all sides. Remove the sausages from the skillet and set them aside.
- Pour in one bottle of beer to deglaze the pan, making sure to scrape up any browned bits from the bottom of the skillet.
- Add the sliced red and green bell peppers, red onions, and chopped garlic to the skillet.
- Pour in the remaining bottle of beer along with the tomato paste. Stir to combine.
- Season with chopped oregano, chopped cilantro, hot sauce, salt, and pepper. Stir well to incorporate the spices.
- Cover the skillet and let it simmer, allowing the onions and peppers to soften and become tender.
- Slice the browned sausages into bite-sized pieces and add them back into the skillet.
- Cover again and continue to simmer until the sausages are fully cooked through.
