Ingredients

  • 1 egg
  • 2 tablespoons milk
  • cup all-purpose flour
  • 1 teaspoon salt
  • teaspoon paprika
  • 6 skinless, boneless chicken breast halves
  • 4 tablespoons butter
  • pound sliced fresh mushrooms
  • cup chopped onion
  • 1 cup chicken broth
  • cup white wine
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon chopped fresh parsley (for garnish)

Directions

  1. In a shallow bowl, whisk together the egg and milk.
  2. In another shallow bowl, combine the flour, salt, and paprika.
  3. Dip each chicken breast into the egg mixture, letting any excess drip off, then coat both sides in the flour mixture.
  4. In a large skillet, melt the butter over medium-high heat. Once hot, add the chicken breasts and saut for about 2 to 3 minutes per side, or until golden brown.
  5. Add the sliced mushrooms and chopped onion to the skillet. Continue sauting for 3 to 5 minutes, until the mushrooms release their moisture and become tender.
  6. In a medium bowl, whisk together the chicken broth, white wine, lemon juice, and cornstarch. Pour this mixture over the chicken and mushrooms in the skillet.
  7. Reduce the heat to medium-low and let the dish simmer for about 25 minutes, or until the chicken is cooked through and the juices run clear. An instant-read thermometer inserted into the thickest part of the chicken should read at least 165F (74C).
