Ingredients
- 1 egg
- 2 tablespoons milk
- cup all-purpose flour
- 1 teaspoon salt
- teaspoon paprika
- 6 skinless, boneless chicken breast halves
- 4 tablespoons butter
- pound sliced fresh mushrooms
- cup chopped onion
- 1 cup chicken broth
- cup white wine
- 2 tablespoons lemon juice
- 1 tablespoon cornstarch
- 1 tablespoon chopped fresh parsley (for garnish)
Directions
- In a shallow bowl, whisk together the egg and milk.
- In another shallow bowl, combine the flour, salt, and paprika.
- Dip each chicken breast into the egg mixture, letting any excess drip off, then coat both sides in the flour mixture.
- In a large skillet, melt the butter over medium-high heat. Once hot, add the chicken breasts and saut for about 2 to 3 minutes per side, or until golden brown.
- Add the sliced mushrooms and chopped onion to the skillet. Continue sauting for 3 to 5 minutes, until the mushrooms release their moisture and become tender.
- In a medium bowl, whisk together the chicken broth, white wine, lemon juice, and cornstarch. Pour this mixture over the chicken and mushrooms in the skillet.
- Reduce the heat to medium-low and let the dish simmer for about 25 minutes, or until the chicken is cooked through and the juices run clear. An instant-read thermometer inserted into the thickest part of the chicken should read at least 165F (74C).
- Sprinkle with freshly chopped parsley and serve hot.
