Thai Steamed Mussels Recipe

Ingredients

  • 1 (13.5 ounce) can unsweetened coconut milk
  • cup fresh lime juice
  • cup dry white wine
  • 1 tablespoons Thai red curry paste
  • 1 tablespoons minced garlic
  • 1 tablespoon Asian fish sauce
  • 1 tablespoon white sugar
  • 5 pounds fresh mussels, scrubbed and debearded
  • 2 cups chopped fresh cilantro

Directions

  1. In a large pot, combine the coconut milk, lime juice, white wine, curry paste, garlic, fish sauce, and sugar. Stir well to dissolve the sugar and curry paste.
  2. Bring the mixture to a boil over medium-high heat. Allow it to boil for 2 minutes, stirring occasionally to ensure even consistency.
  3. Add the mussels to the pot and cover it with a lid. Cook, stirring occasionally, for 5 to 8 minutes, or until the mussels have opened up.
  4. Once cooked, remove the pot from the heat. Discard any mussels that remain closed.
  5. Transfer the mussels and sauce to a serving dish and toss with freshly chopped cilantro before serving.
