Thai Steamed Mussels Recipe

Ingredients
- 1 (13.5 ounce) can unsweetened coconut milk
- cup fresh lime juice
- cup dry white wine
- 1 tablespoons Thai red curry paste
- 1 tablespoons minced garlic
- 1 tablespoon Asian fish sauce
- 1 tablespoon white sugar
- 5 pounds fresh mussels, scrubbed and debearded
- 2 cups chopped fresh cilantro
Directions
- In a large pot, combine the coconut milk, lime juice, white wine, curry paste, garlic, fish sauce, and sugar. Stir well to dissolve the sugar and curry paste.
- Bring the mixture to a boil over medium-high heat. Allow it to boil for 2 minutes, stirring occasionally to ensure even consistency.
- Add the mussels to the pot and cover it with a lid. Cook, stirring occasionally, for 5 to 8 minutes, or until the mussels have opened up.
- Once cooked, remove the pot from the heat. Discard any mussels that remain closed.
- Transfer the mussels and sauce to a serving dish and toss with freshly chopped cilantro before serving.
