Jerk Chicken and Pasta Recipe

  • 4 skinless, boneless chicken breast halves
  • 2 teaspoons jerk paste
  • 1 (12 ounce) package uncooked egg noodles
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 cup chicken stock
  • cup dry white wine
  • cup chopped fresh cilantro
  • 1 tablespoon jerk paste
  • Salt and pepper to taste
  • 2 medium limes, quartered, divided
  • cup heavy whipping cream
  • 4 sprigs fresh cilantro, for garnish

Directions

Step 1: To prepare the chicken, rub both sides of the chicken breasts with the jerk paste. Place the chicken in a shallow dish, cover, and refrigerate for at least 1 hour to allow the flavors to marinate.

Step 2: Preheat an outdoor grill to high heat. Lightly oil the grate to prevent the chicken from sticking. Grill the chicken for 8 to 10 minutes per side, or until the center is no longer pink and the juices run clear. An instant-read thermometer inserted into the thickest part should read at least 165F (74C). Once done, remove the chicken from the grill and set it aside to keep warm.

Step 3: While the chicken is cooking, prepare the pasta. Bring a large pot of lightly salted water to a boil. Add the egg noodles and cook for 6 to 8 minutes, until the noodles are tender yet firm to the bite. Drain and set aside.

Step 4: In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and saut for about 1 minute, until fragrant. Then, stir in the chicken stock, dry white wine, chopped cilantro, jerk paste, salt, and pepper. Squeeze the juice from half of the lime quarters into the pan, and bring the mixture to a boil.

Step 5: Once the sauce is boiling, reduce the heat to low. Stir in the heavy whipping cream and cook for another 5 minutes, stirring occasionally. Let the sauce thicken, but be careful not to let it boil again.

Step 6: Add the cooked egg noodles to the saucepan, tossing them gently in the creamy sauce until they are well coated and warm.

Step 7: Divide the noodles evenly among four serving plates. Top each plate with a grilled chicken breast. Squeeze the remaining lime quarters over the dish and garnish with fresh cilantro sprigs.
