Beef Stroganoff Recipe

Ingredients

  • 2 pounds beef chuck roast
  • teaspoon salt
  • teaspoon ground black pepper
  • 4 ounces butter
  • 4 green onions, sliced (white parts only)
  • 4 tablespoons all-purpose flour
  • 1 (10.5 ounce) can condensed beef broth
  • 1 teaspoon prepared mustard
  • 1 (6 ounce) can sliced mushrooms, drained
  • cup sour cream
  • cup white wine
  • Salt and ground black pepper to taste

Directions

Step 1: Begin by removing any fat and gristle from the chuck roast. Cut it into strips, about -inch thick and 2 inches long. Season the strips with teaspoon of salt and teaspoon of ground black pepper.

Step 2: Melt 4 ounces of butter in a large skillet over medium heat. Add the beef strips to the skillet and brown them quickly on all sides.

Step 3: Push the browned beef to one side of the skillet. Add the sliced green onions and cook, stirring occasionally, for 3 to 5 minutes, until they begin to soften. Once cooked, move the onions to the side with the beef.

Step 4: On the empty side of the skillet, sprinkle in 4 tablespoons of flour. Stir the flour into the pan juices and let it cook for a minute.

Step 5: Pour in 1 can of beef broth (10.5 ounces) and bring the mixture to a boil, stirring constantly to avoid lumps. Once it boils, reduce the heat to low.

Step 6: Stir in 1 teaspoon of mustard. Cover the skillet and let it simmer for about 1 hour, or until the beef becomes tender and the flavors meld together.

Step 7: About 5 minutes before serving, add the drained mushrooms, sour cream, and white wine to the skillet. Stir gently to combine, allowing the mixture to heat through. Adjust the seasoning with salt and pepper to taste.

Step 8: Serve the Beef Stroganoff hot, over a bed of freshly cooked noodles. Enjoy!

Cook's Notes

You can use fresh sauted mushrooms instead of canned for a more vibrant flavor. If you prefer, you can substitute sirloin or tenderloin strips for the chuck roast, but be sure to reduce the simmering time to 20 minutes for a quicker cook. For a family-friendly version, use a dry white wine like Sauvignon Blanc, or simply add extra broth if you'd rather skip the alcohol.
