Oven-Roasted Carrots Recipe

Roasted Carrots with Pecans and Panko

Ingredients

  • 8 ounces carrots, peeled and cut into 3-inch-long pieces
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • cup chopped pecans (Optional)
  • cup panko bread crumbs (Optional)

Directions

  1. Preheat the oven to 425F (220C).
  2. In a bowl, toss the carrots with olive oil and Italian seasoning.
  3. Transfer the seasoned carrots to a rimmed baking sheet.
  4. Roast in the preheated oven for 15 minutes.
  5. Sprinkle the pecans and panko bread crumbs on top of the carrots.
  6. Continue roasting until the carrots are golden and crispy, about 5 minutes more.
  7. Serve immediately and enjoy!
